SI MON PÈRE SAVAIT AOC CÔTES DU ROUSSILLON WINE ESTATE OWNER The town of Estagel, alongtime to winegrowing centre, is located near the Corbières appellation, at the gateway of the Cathar country, in the French Pyrénées. The village, a stopover on the Roussillon road to Fenouillèdes, is mentioned in the year 950 as «Stagello» and the area is the site of many prehistoric remains. The 450,000 years old skeleton of Tautavel man was found close by. Location: Estagel (Pyrénées Orientales). Area under vine: 12.50 hectares. Wine grape variety: 46% Carignan, 30% Syrah, 19% Grenache noir, 5% Mourvèdre. Age of vines: 50 to 100 years. Vine density: 3,600 to 4,000 vines per hectare. Terroir: Schist soil. Viticulture: Trellised vines with gobelet pruning. Bud thinning, leaf thinning on one side, and green harvesting. Winemaking: The grapes are hand-picked into small crates, manually destemmed, and then sorted on a specially equipped table. They are put into vat using gravity flow. Cool pre-fermentation maceration is followed by traditional, temperature-controlled fermentation. The cap is punched down manually. Malolactic fermentation and ageing take place in new French oak barrels. Yield: 35 hectolitres per hectare.
