The Passion d’Une Vie vineyard borders that of Si Mon Père Savait in the village of Estagel in the French Pyrénées.The history of this town dates back to
prehistoric times. The Romans also left their mark in a gallo-roman cemetery
with many tombs which have enabled archaeologists to learn a great deal about
this period.
Location: Estagel (Pyrénées Orientales).
Area under vine: 8 hectares.
Wine grape variety: 41% Carignan, 20% Syrah, 27% Grenache noir,
12% Mourvèdre.
Age of vines: 50 years – 100 years.
Vine density: 3,600 to 4,000 vines per hectare.
Terroir: Schist soil on hilltops.
Viticulture: Trellised vines and gobelet pruning. Bud thinning, leaf
thinning on one side, and green harvesting.
Winemaking: The grapes are hand-picked into small crates and partly
destemmed by hand before sorting on a specially-equipped table. The fruit is
put into barrels with a capacity of 600 litres as well as into small wooden vats
using gravity flow. Cool pre-fermentation maceration is followed by traditional
temperature-controlled fermentation. The cap is manually punched down and
the wine stays on the skins for a long time. Malolactic fermentation and ageing
in new French oak barrels.
Yield: 25 hectolitres per hectare.
