We are heading off to visit the market in Ordizia. It is the oldest in Gipuzkoa and
has been held since 1512. There, guided by a famous chef and helped by the
farmers themselves you will choose the ingredients required to compose a delicious
and healthy menu. Once you have chosen the seasonal produce, the fruit of our
land, we will become chefs and cook a healthy meal with the fresh produce we have
chosen. What better way to end the morning than by savouring the food we have
cooked!

Rendez-vous au marché d’Ordizia, le plus ancien de Guipuzcoa, qui existe depuis
1512 et où, de la main d’un prestigieux cuisinier et en collaboration directe avec les
producteurs, vous pourrez choisir les ingrédients nécessaires pour élaborer un menu
sain et délicieux. Après avoir choisi les produits de saison, fruits de notre terre, vous

Don’t miss the market that has been held on a
Saturday in Tolosa for centuries, as it is considered
to be one of the most typical in the Basque Country. It
occupies three different open-air areas, transforming
the town centre into a huge fair. The tour begins in the
area known as Tinglado or Zerkausia, where the
local area’s most typical produce is sold; one square,
Plaza Berdura, is home to a flower and plant market,
and another, Plaza Euskal Herria, hawks products
from far and wide.
Round off your tour with a visit to a bean patch to
discover all the secrets of the local black bean, the
Alubia de Tolosa (June-November) and end the
morning with a plate of bean stew, the Alubiada
de Tolosa, with Ibarra green chillies and all the
sacramentos (meat and offal used to make the stew).

Le samedi, ne manquez pas de visiter le marché
qui se tient à Tolosa depuis des siècles, considéré
comme l’un des plus typiques du Pays Basque.
Il occupe trois espaces différents à l’air libre, ce
qui transforme le centre ville en grande foire. Le
parcours commence dans l’enceinte du Tinglado ou
Zerkausia, où se vendent les produits autochtones
les plus représentatifs de la région; la place Berdura
accueil un marché aux fleurs et aux plantes, et sur
la place Euskal Herria vous trouverez les produits
venus d’ailleurs.
Complétez le circuit par la visite d’une plantation de
haricots secs (Alubias), pour découvrir les secrets
de l’Alubia de Tolosa (de juin à novembre) et
terminez la matinée par un cassoulet local (Alubiada
de Tolosa), avec des piments d’Ibarra et ses
accompagnements.

To conclude the tour, we shall either
visit the Goizane Centre in Zaldibia to
enjoy the screening of an audiovisual
presentation called “Aralar, una mirada
desde el caserío” (Aralar, a view from
the farmhouse) and visit its farm shop,
or else we shall make our way to the
neighbourhood of Larraitz, specifically
to the Txindokiko Itzala Centre, which
also has a shop selling local fare, where
we can additionally enjoy the views of
Mount Txindoki, popularly referred to
as the “little Matterhorn”.

If you visit us between January and May,
remember that you mustn’t go home without
having enjoyed the festive atmosphere in one of
our cider houses. What you need to know is that
there is a set menu, and remember that the first
thing you do when you walk into the cider house
is pick up a glass and go up to the first kupela or
barrel. From then on it’s all plain sailing:
The first course is an omelette stuffed with salt
cod (tortilla de bacalao); this is followed by
fried cod with red peppers or in a tomato sauce
(bacalo frito con pimientos o en salsa de
tomate). The main dish is a huge
t-bone steak, the txuleta, and
after tasting the cider
from all the kupelas, we
return to our seats to
end our delicious feast
with Idiazabal cheese
and its garnishes:
quince jelly (membrillo)
and walnuts (nueces).

Taste the local
wine, Txakoli,

Our first stop on this tour will be a
visit to a bodega, or winery, where
an excellent local wine called txakoli
is made in a traditional way using a
totally ecological process. The visit
will also enable us to enjoy stunning
scenery, as it is located in Olaberria,
one of the prettiest villages in the
Goierri district, with the town being
popularly referred to as the Balcony of
the Goierri in the middle of the Basque
Highlands, as from here one can look
out over the area’s two Natural Parks:
Aralar and Aizkorri-Aratz.
We shall be accompanied on this visit
by a chef who is a member of EuroToques and Nariz de Oro (Golden
Nose), whose explanations will help us
to discover and enjoy this wine that is
produced with tender loving care by a
family of wine-makers.

tasting of the different varieties of this famous cheese; the
next stage is a visit to Ordizia market, and don’t miss out on a

LE PETIT CERVINO: TXINDOKI
THE LITTLE MATTERHORN: TXINDOKI
Le mont Txindoki ou Larrunarri, de 1.346 m d’altitude
et situé dans la montagne d’Aralar (entre la Guipuzcoa et la
Navarre), est l’une des hauteurs les plus emblématiques du
territoire historique de la région. L’ascension commence au
pied de la montagne par l’ermitage de Notre Dame des
Remedios, à Larraitz, très vénérée par les habitants des
environs. La légende raconte que son sommet est
la résidence de « Mari », la déesse par excellence
de l’Olympe basque.
Rising to a height of 1.346 m, and situated in the Aralar
mountain range (between Gipuzkoa and Navarre),
Mount Txindoki or Larrunarri is one of the most iconic
mountains in the province of Gipuzkoa. The climb starts at
the foot of the mountain at the chapel of Nuestra Señora
de los Remedios, in Larraitz, which is greatly revered by
the local people. Legend has it that “Mari”, the supreme
goddess of the Basque Olympus, has one of
her homes there.

Become a miner
Enjoy a pleasant walk along the greenway taking you into the
Goierri mining complex that for years witnessed the tireless work of
numerous people as they toiled to extract iron ore from the bowels of
the earth. The ore was then sent to Ormaiztegi railway station and
from there on to different countries in Europe.
Ormaiztegi is the starting point for the trails that will lead you past
numerous industrial heritage sites. It is 4.4 km long and leads to
the chapel of Liernia, whose Madonna is considered to be the
protector of poultry and defender of childless women; the hike
continues to the little village of Mutiloa.

Take a gentle walk along the old railway track and become a true
miner by visiting the galleries and baking kilns at the former mining
facility of Aizpea in Zerain.

vous permettra de pénétrer dans le complexe minier du Goierri qui
a pendant des années été témoin du travail infatigable de nombreuses
personnes pour extraire le minerai de fer des entrailles de la terre, pour ensuite
l’envoyer jusqu’à la gare de chemin de fer d’Ormaiztegi d’où il partait vers
différents pays d’Europe.
À Ormaiztegi commence le sentier sur lequel vous trouverez de nombreux éléments
du patrimoine industriel. Le parcours de 4,4 km vous mènera jusqu’à l’ermitage
de Liernia, dont la Vierge est considérée protectrice des animaux de basse-cour et
l’avocate des femmes stériles; la randonnée continue jusqu’au petit village de Mutiloa.
Promenez-vous tranquillement en suivant le tracé de l’ancienne ligne de train et
devenez un véritable mineur en visitant les galeries et les fours de calcination
de l’ancien complexe minier d’Aizpea en Zerain.

qui traversaient le pont de Saint Jacques pour arriver
sur la péninsule par Irún et rejoindre, à travers ce
tronçon qui parcourt l’Euskadi du nord au sud

perfect view of the districts of the Goierri

A Journey to the Middle Ages
Voyage au Moyen Âge
Towards the middle of the 13th century, specifically in
1256, King Alfonso X the Wise founded Tolosa,
Ordizia and Segura, three inland fortifications located
along Castile’s frontier with the Kingdom of Navarre.
À la moitié du XIIIe siècle, plus précisément en 1256,
Alfonso X Le Sage fonda Tolosa, Ordizia et Segura,
trois emplacements défensifs intérieurs, situés au long de
la frontière entre la Castille et le royaume de Navarre.
Let us now start out on this journey that will take us
back in time in Tolosa. Tolosa was a walled town on an
island formed by the Oria River and one of its branches.
In 1503 Tolosa was razed by fire and the reconstruction
began using stone. Today, the old quarter still retains
the layout of six streets running lengthways with other
smaller ones crossing between them, as well as the
Castilla Gate.
Nous vous invitons à commencer ce voyage dans le
temps à Tolosa. Tolosa était une enceinte fermée sur
une île dessinée par le fleuve Oria et l’un de ses bras.
En 1503, Tolosa brûla lors d’un incendie suite auquel sa
reconstruction fut effectuée en pierre. Dans l’actualité,
l’ancien bourg conserve le tracé de ses six rues
longitudinales, ainsi que des rues transversales de taille
plus réduite et la porte de Castille.
We continue our journey to Ordizia, the old medieval
Villafranca, where we can visit the historical quarter: you
can touch the stones that made up its ancient ramparts
and its watchtower and visit the main monuments that
remind us of this medieval town’s splendid past.
Poursuivez votre voyage jusqu’à Ordizia, l’ancienne
Villafranca médiévale où vous pourrez visiter son
ancien centre historique : vous pourrez toucher les
pierres qui composaient son ancienne muraille et sa
tour de gué et connaître les principaux monuments qui
vous rapprocheront du passé resplendissant de cette
bourgade médiévale.
Back on the road again we head for Beasain, where we
will visit the Igartza historical site, the home of one
of the most important feudal lords of the Middle Ages.
We will learn about his palace, the mill, the forge, the
bridge...
After lunch we will be on our way once again and
complete the journey in the delightful village of Segura,
were we can visit one of the oldest dwellings in the
Basque Country, built at the beginning of the 16th
century with a wooden structure that gives us a glimpse
of the way our ancestors lived. Still in Segura, we can go
in and out of the gates in the old fortified wall and admire
its parish church with a stunningly beautiful Baroque
altarpiece.
During the medieval festivities held in Ordizia (May)
and Segura (July) you can dress up in period costume
and feel part of these celebrations that turn Ordizia and
Segura into true medieval towns.

sheep farming. Yet for years it has also
exploited other natural resources, such as,
for example, coal, stone, iron...

Let us begin by visiting the Mountain of
Iron, the Montaña de Hierro, where we can
visit the Aizpitta Interpretation Centre
and the Polvorín (Powder keg) gallery.

After that we shall visit a water-driven
sawmill, the Serrería Hidraúlica, in
Larraondo. Built in 1890, it drives the saws
with water from a small stream called the
Lasurtegi, which rises in the hills of Zerain.
Today it remains in the same condition as
yesteryear.

In the afternoon we will visit the Museum of
Ethnography, where we will be explained
how the way of life and traditions have
evolved in this town in the Goierri district,
and we conclude the visit at the prison
dating from 1711.

Larraul, écomusée
Larraul, eco-museum
Le musée ethnographique de Larraul a ouvert ses
portes en 1998. Les pièces que vous y trouverez -outils,
ustensiles, reproduction d’une cuisine, pressoir, photos
anciennes, etc.-, cédées par les habitants de Larraul
reflètent les coutumes et le mode de vie rural. Une vidéo
projetée en introduction montre une perspective plus
complète de Larraul.
The Larraul Museum of Ethnography
opened to the public in 1998. The exhibits that
are on display there, lent by the local people of
Larraul - tools, implements, a reproduction of
a kitchen, press, old photographs, etc.- reflect
the customs and habits of a rural way of life.
The audiovisual projection provided as an
introduction gives us a more comprehensive
perspective on Larraul.
L’église San Esteban offre un patrimoine aussi bien
culturel que social, de grand intérêt. Derrière son
retable principal vous pourrez observer une grisaille ou
peinture murale du XVIe siècle, unique en Guipuzcoa. La
municipalité de Larraul a été fondée en 1840, autour de
ce joyau patrimonial. Pendant les fêtes patronales (San
Esteban) le personnage de la légende basque «Pello
Joxepe» descend du clocher jusqu’à la place de Larraul.
En plus du musée et de l’église, vous pourrez visiter le
moulin de Txuringadi ou encore pratiquer la randonnée,
dans la mesure où ce village est situé au pied du mont
Ernio, montagne très visitée par les habitants de la région.
The Church of San Esteban is an extremely
interesting repository of both cultural and social
heritage. Behind the main altarpiece we can
see a grisaille or mural painting dating from
the 16th century and the only one of its kind in
Gipuzkoa. The town of Larraul was founded in
1840 around this jewel from past times. During
the local festivities in honour of the patron saint
(San Esteban, or Saint Stephen) a legendary
Basque character called “Pello Joxepe”
descends along a rope from the bell tower to
the main square in Larraul.
In addition to the museum and the church,
there are organised visits to the mill at
Txuringadi or the option of hiking in the
mountains, as this village stands at the foot of
Mount Ernio, a very popular excursion for local
people in Gipuzkoa.

On 25 June 1813, during the Peninsular War, when
the French were in full retreat, Tolosa was the scene
of a great battle between the Allies and Napoleon’s
forces, with 45,000 troops taking part. The battle put an
end to the French occupation of the town, which had
lasted for more than five years, and which even led to
fraternisation between the local people and the soldiers
stationed at the gendarmerie the French forces had
in Tolosa. «Some were Basque speakers. There were
marriages and love affairs between local girls and the
gendarmes», «It is very likely that if there had not been a
French gendarméríe, Tolosa would have been sacked by
the French troops as they withdrew, as happened in San
Sebastian».
Le 25 juin 1813, à l’époque napoléonienne, alors que
les Français battaient en retraite, Tolosa a été le cadre
d’une grande bataille entre l’armée alliée et l’armée
française, à laquelle ont pris part 45.000 combattants.
Cette bataille mis fin à l’occupation française du bourg,
qui avait duré cinq ans et qui avait donné lieu à une
période de fraternisation en les habitants et les soldats qui
résidaient à la gendarmerie installée par l’armée française
à Tolosa. «Certains d’entre eux parlaient basque. Il y eut
des mariages et des histoires d’amour entre demoiselles
de Tolosa et gendarmes», «Il est possible qu’en l’absence
de gendarmerie française, Tolosa ait été saccagée par
les troupes françaises lors de leur repli, à leur passage en
Donostia».

The Carlists in the
Basque Country
Discover living history, lessons on life, salutary
accounts of sacrifice, and learn about the history
of our country in the 19th century through the
figure of a legendary character, namely, the
Carlist General Tomás Zumalakarregi.
The departure point for this short tour begins at
the Iriarte-Erdikoa House in Ormaiztegi, a
typical 18th century Basque farmhouse, now
converted into the Zumalakarregi Museum
and a tourist office. Here you will learn not only
about some of the more renowned members of
the Zumalakarregi family, Tomás, a Carlist general,
and Miguel, a liberal politician, but also about
the Basque Country in the 19th century. It was
a period of major social, cultural, economic and
political upheaval that ushered in the modern
world. The museum has a children’s area for
learning about the 19th century through suitable
games.
After visiting the museum, the tour will take you to
the Ormaiztegi viaduct, where you can discover
the history of a unique bridge built around the
middle of the 19th century. It is staggeringly large
and reveals a masterful use of ironwork. The
greenway is at the top of a steep but short slope
and can be reached on foot, providing a pleasant
walk under the bridge, or by parking your car at
Ormaiztegi station.
Visit Zerain, the village that was home to the
General’s trusted physician.
Then head for Zegama, where the General
died, to the church where he is buried, and
you will discover many more secrets about this
unforgettable figure.

impressionnantes, construit à la moitié du XIXe
siècle et sur lequel le fer a été magistralement
travaillé. Pour accéder à la voie verte, vous
devrez monter une côte prononcée mais courte,
à pied, en réalisant une agréable promenade
sous le pont, ou en garant votre véhicule à la gare
d’Ormaiztegi.

It is a set, a stage, a laboratory. It is
not a display case.
