Le style Régence correspond à la période transitoire de 1715 à 1723 pendant laquelle Philippe d’Orléans fut le Régent du
royaume après la mort de Louis XIV, jusqu’à ce que Louis XV atteigne la majorité pour régner, c’est-à-dire 13 ans et 1 jour.
Il se traduit dans les arts décoratifs par une domination de la fantaisie et de l’élégance, en rupture avec le style rigoureux
qui dominait sous Louis XIV. Des motifs décoratifs nouveaux apparaissent : on retrouve souvent la coquille associée à
d’autres éléments de la nature et les lignes se courbent, les formes se font plus raffinées. La collection “Régence” Ercuis
est encore aujourd’hui le témoin du savoir-faire inégalable de l’orfèvre. Ainsi, le travail de ciselure sur les motifs du
candélabre à cinq branches demande plus de huit heures de travail.

The Régence style corresponds to the transition period between 1715 and 1723 during which Philippe d’Orléans ruled as
Regent after the death of Louis XIV, until Louis XV came of age, i.e. for 13 years and one day. In the decorative arts this was
reflected in a resurgence of imagination and elegance, in contrast to the austere style of the Louis XIV period. New patterns
appeared: shells feature prominently, with other natural themes, lines curve gracefully and shapes become more refined.
Ercuis's “Régence” collection carries the memory of the matchless craftsmanship of these metalworkers. The chiselling
of the five-branch candelabra takes more than eight hours.

Le style Louis XV, ou Rocaille, pousse plus loin la fantaisie et l’opulence du style Régence. Ce style est l’un des plus
imaginatifs de l’histoire des arts décoratifs et s’est imposé, au cours des siècles, comme l’incarnation la plus parfaite de
l’identité du goût français. Il se distingue par des motifs végétaux, coquilles, fleurs et feuillages, disposés avec une
asymétrie harmonieuse et des lignes générales multipliant entrelacs et arabesques. La collection “Louis XV” Ercuis évoque
cette esthétique particulière, notamment la bouilloire très ouvragée. Cette dernière est composée d’un support ciselé
reposant sur quatre pieds “boules” en ébène, permettant de la faire basculer pour le service et de maintenir l’eau chaude
grâce à une lampe à alcool. L’anse mobile est également garnie d’une poignée en ébène. En tout, la réalisation de cette
pièce demande huit heures de travail d’assemblage, soudure et reprise.

The Louis XV style, or Rocaille, pushes the fanciful opulence of the Regency period even further. This style is one of the
most imaginative in the history of the decorative arts and has, over the centuries, been recognised as the most perfect,
defining embodiment of French taste. It is typified by plant motifs, shells, flowers and leaves, arranged with a pleasant
asymmetry and the lines of the compositions entwined in convoluted arabesques. Ercuis's “Louis XV” collection recalls
this special period, particularly in the elaborately worked kettle, consisting of a chiselled cast iron base supported by four
balls of ebony, allowing it to tilt for pouring and keep the water hot over an alcohol burner. The moveable handle has an
ebony handgrip. The creation of this piece takes eight hours, including assembly, soldering and finishing.

Le début du XIXe siècle utilise l’Antiquité et ses symboles comme principales sources d’inspiration dans les arts décoratifs,
répondant au désir de l’empereur Napoléon I er de représenter la grandeur de son règne. La symétrie est respectée, les
lignes droites sont sobres, soulignées par des lauriers et des palmettes, ainsi que des symboles animaliers comme l’abeille,
le sphinx ou l’aigle. La collection “Empire” Ercuis évoque avec élégance les codes décoratifs de cette époque et les associe
sur des pièces richement décorées, minutieusement assemblées, brasées, bâtées et ciselées au sein de notre atelier
d’orfèvrerie.
In the early 19th century, the symbols of the ancient world provided the major subjects for the decorative arts, reflecting
the desire of Emperor Napoleon I to proclaim the greatness of his reign. Designs are symmetrical, the straight lines are
strict, underlined by laurels and palmettes, as well as animals, including bees, sphinxes and eagles. Ercuis's “Empire”
collection elegantly evokes the decorative themes of the period, and its compositions feature on lavishly decorated pieces
that have been painstakingly assembled, soldered, bordered and engraved in our workshop.

These three pieces were specially created for a client who wanted tableware to match the “Insolent” cutlery he had just
bought. The traditional craftsmanship of the silversmith is combined in this piece with an advanced technology, chemical
etching, that can perfectly reproduce the Renaissance-inspired pattern of the sterling silver cutlery on holloware.
A crowning touch for the most prestigious tables.

L’usage de la presse à canard suppose tout un rituel qui contribue au plaisir de la grande gastronomie.
Tout d’abord, le canard doit être tué non saigné puis cuit pendant quinze minutes. On le présente ainsi en salle, on
découpe ensuite les aiguillettes dans le magret qui seront flambées au cognac. Les cuisses qui feront l’objet d’une
deuxième cuisson seront présentées lors d’un deuxième service. La carcasse découpée est introduite dans la presse pour
y subir une forte pression. Le sang qui coule généreusement est mélangé aux abats et passé au tamis puis réduit avant
d’être lié au Foie Gras, garni et servi.
The duck press is used for a time-honored ritual that contributes to the pleasure of true gastronomy.
First the duck is killed, not bled, then cooked for 15 minutes. It is presented this way to the guests, before the aiguillettes
are cut from the breast fillet and flambeed with cognac. The drumsticks are cooked again and presented for the second
helping. The carcass undergoes a strong pressing in the press. The blood expressed is mixed with the giblets, sieved, and
reduced, before being thickened with Foie Gras.

Au contact prolongé de l’air, une pièce d’argenterie noircit et perd de son éclat. Que faire ?
Avant tout, et c’est sans doute le premier conseil à communiquer aux utilisateurs d’argenterie, le meilleur et le plus simple
entretien est son usage fréquent. En effet la coloration apparaissant assez lentement, l’orfèvrerie n’aura pas le temps de noircir
entre deux utilisations. De plus son emploi régulier en assure automatiquement le nettoyage et confère à toutes les pièces
la véritable “patine” propre à l’argent.
Le lavage
Contrairement à une idée reçue très répandue, le lavage en machine ne fait pas courir de risque très particulier à l’argenterie,
néanmoins il faut respecter les recommandations suivantes :
- placer dans des paniers différents les couverts en argent et ceux en acier, ainsi que les couteaux dont la lame est en acier,
- utiliser de la poudre de lavage exclusivement (et surtout pas de liquide ou gel), Ercuis recommande les produits “Calgonite”,
- ouvrir la porte du lave-vaisselle à la fin du cycle pour évacuer la vapeur d’eau et éviter les traces de gouttelettes,
- en cas de lavage à la main, proscrire l’eau de Javel ou le caoutchouc (gants, élastiques, tissu caoutchouté) qui contient du
souffre et provoque des traces noires assez tenaces.
Attention : les couverts en argent massif aux manches montés ne doivent pas être mis au lave-vaisselle, celui-ci abimerait
les matériaux précieux et/ou naturels de leurs manches (bois, pierres semi-précieuses) et fragiliserait leur montage.
Le nettoyage
Lorsqu’une pièce d’orfèvrerie est oxydée, mieux vaut choisir un produit spécifique réservé à l’argenterie, en respectant le
mode d’emploi et en utilisant un chiffon doux pour appliquer le produit.
Ercuis vous propose la “Lotion nettoyante”, pour des pièces légèrement oxydées, ou la “Pâte à argenterie”, pour des pièces
plus oxydées ou tachées, notamment par les œufs ou la vinaigrette. Pour un usage fréquent, les gants imprégnés ou la
chamoisine sont simple d’usage surtout pour les pièces décoratives : en une minute, les timbales, les bougeoirs… retrouvent
leur éclat. Ils sont efficaces longtemps mais attention à ne pas les laver car ils perdraient toutes leurs propriétés.
L’entretien des couverts “Insolent” et “Calypso”
L’entretien de ces couverts composés d’une délicate grille en argent massif nécessite des précautions très particulières.
N’utilisez pas de “Pâte à argenterie” ni de gants imprégnés qui risqueraient de s’accrocher dans la grille et de l’abimer.
Préférez-leur l’utilisation de la “Solution de nettoyage”, qui permet de leur redonner éclat et brillance en les y plongeant
quelques secondes seulement à l’aide d’un panier immergé. Il suffit ensuite de les rincer à l’eau claire et de les sécher par
tamponnement avec un torchon.
After long exposure to the air, silverware blackens and loses its brilliance. What should be done?
First of all, and undoubtedly the first piece of advice to communicate to users of silver, the best and easiest maintenance
is frequent use. Indeed, since the staining appears rather slowly, the silver will not have time to darken between uses. In
addition, its regular use automatically provides for cleaning and gives all the pieces the true “patina” of silver.
Washing
Contrary to popular belief, the dishwasher does not pose a large risk for holloware; however, you must observe the
following instructions:
- place the silver and steel flatware in different baskets, as well as the knives with steel blades,
- use washing powder only (and especially not liquid or gel), Ercuis recommends “Calgonit” products,
- open the door of the dishwasher at the end of the cycle to remove water vapor and avoid leaving drop marks,
- when washing by hand, do not use bleach or rubber (gloves, elastic, rubber fabric), which contains sulfur and causes
stubborn black marks.
Attention: sterling silver flatware with mounted handles should not be placed in the dishwasher, this will damage the
precious and/or natural materials of their handles (wood, semi-precious stones) and would weaken the mounting.
Cleaning
When a piece of holloware is oxidized, it is better to choose a specific product reserved for silver, while following the
instructions and using a soft cloth to apply the product.
Ercuis offers a "Silver polish" for slight oxidation, and a "Silver foam" for pieces that are more oxidised or stained, especially
by egg or vinaigrette. For frequent use, impregnated mitts or a chamois cloth are practical, especially for decorative pieces:
tumblers, candlesticks are restored to their full glory in a few seconds. They preserve their effectiveness for a long time, on
condition that they are not washed, which would remove their cleaning properties.
Maintenance of “Insolent” and “Calypso” cutlery
Special care must be taken over cleaning these pieces, with their delicate sterling silver grille. Do not use the "Silver foam" or
impregnated mitts that might catch on the grille and damage it. Place in a protective basket and immerse in the "Silver
cutlery rinse" for just a few seconds to restore all their brilliance. Then rinse in clear water and blot dry with a cloth.
