Restaurant Le Cheval de Jade 688 rue de Saint-Jovite Mont-Tremblant J8E-3J8 Tél : 819 425 5233 www.chevaldejade.com Table d’Or 2011 Snow crab and Matane shrimp cake For 12 people Preparation 15 minute, cooking 5 minute Ingredients: -30 g of chopped shallot -60 g carrots, finely diced (cubes of 1mm x 1mm) -60 g of diced green zucchini (cubes of 1mmx1mm) -1knob of butter -Canola oil -salt and pepper -400g crabmeat snow -150g Matane shrimp -1 egg -30g flour Saute the shallots, carrots, zucchini in butter and canola oil without browning and cool. Incorporate them into the crab meat and shrimp, then add the egg and flour, salt and pepper. Make a cake, seared them in a little vegetable oil (canola) and cook 5 minutes in the oven to 375 degrees F. Serve with a salad of endive or a green salad and a black-current dressing. Bon Appétit !
