In the 1890s, Eugène-Aimé Salon set out to create an
extraordinary Champagne. He settled in the Grand Cru
village of Mesnil-sur-Oger and handcrafted a wine of
eternal elegance and prowess.
Made originally for private consumption, a cult following
obliged him to sell some to the public – and so the first
commercial vintage of Salon was released in 1921.
Today, Salon is known to produce one of the most
venerated wines in the world, made only in exceptional
years, when the stars align to deliver Chardonnay grapes of incomparable quality. Only 37 vintages have ever been
made, since that fateful year, a century ago. Indulge!

From a region known first and foremost for its spicy warm reds, we bring you one of the secret white wines of Château de Beaucastel. An ancient wine made from
over-75-year-old Roussanne vines, it is saturated with
apricots and minerality, with flavours that tumble like

‘A prince and his magic cellar’

Once upon a time, there was a prince. By most
accounts, he was not so much charming as
eccentric. His name was Alberico Boncompagni
Ludovisi, Prince of Venosa – and his family,
which can be traced back at least 1,000 years,
included two popes.
In 1946, when the prince inherited Fiorano, he replanted the vineyard with Cabernet
Sauvignon, Merlot, Malvasia and Sémillon. He aged the wine in large numbered barrels,
reusing them year after year. A fine white
mould grew naturally in his cellar, covering the
barrels and bottles, which he stored in neat
stacks. The prince did nothing to remove it; he believed it to be beneficial.
Few people knew of the wines, but their
reputation was excellent. One who was in on the Fiorano secret was Luigi Veronelli, a
leading Italian wine writer – and he bemoaned
their scarcity. To obtain his Cru is practically
impossible,” wrote Mr Veronelli once. “If I lived in Rome, I would beg for these wines at the prince’s door every morning.”
The ageing prince continued to make his wines
until 1995, although he had stopped selling the
bottles. After the ’95 harvest, he pulled out all of the vines in his vineyard, except for a small
plot of cabernet and merlot. He offered no
explanation and, at the time, none was sought.
The prince was now 86 years old, in ill health
and living in a hotel in Rome. He had one
child, Francesca, who married Piero Antinori,
the eminent Tuscan wine-maker, at the Fiorano
estate in 1966. Mr Antinori suggests, today,
that the prince was unable to bear the thought
of anybody else making his wines, when he
could no longer do it himself.
So, the vineyards lay fallow and 14,000 bottles
remained in the prince’s cellar, slowly becoming
engulfed by the white mould, until 2000, when Mr Veronelli learned of the destruction of the vines.
Mr Veronelli requested a sample of one of the
remaining bottles and was told that he could
not have one bottle – but all 14,000: 9,500 of
the Malvasia and 4,500 of the Sémillon – if he
could disperse them properly.
These wines are as much a legacy of the prince
as they are of Mr Veronelli, who, sadly, died
recently, aged 78. Of these wines, which will
never be produced again, he wrote: “They
enchant you with the first taste, burrow in your memory and make you forever better.”

In 1846, Jodocus Prüm painted a sundial on the face of a
rocky outcrop in the centre of a steeply sloping vineyard
which would, after that, become known as the Wehlen
Sundial vineyard or ‘Wehlener Sonnenuhr’. Today, such an
act might be seen as anything from artistic to prankish, yet,
in those days, it was merely pragmatic – the equivalent of
erecting a clock in the town square. The wine-growers of
the region needed a way to keep track of time, and the
steep face of the vineyard seemed as good a place as any.
Now, over 150 years later, Wehlener Sonnenuhr is regarded
as one of the world’s most cherished vineyards, known for
producing ethereal Riesling, so sensational and moving
that it will pull you into its vortex and leave you ravaged
and panting for more. This is the power of great Riesling
– the queen of the wine world.
A wine of extreme precision, its balance of fruit, acidity,
alcohol and sweetness creates a tension which will leave
you electrified, unable to focus on anything else… this wine will silence the room.

Good Burgundy is reminiscent of fine perfume. These
wines exhibit an enchanting blend of fruit, spice and
minerality – pure elegance and finesse, the secret to what
makes Burgundy the holy grail for wine-lovers around the world.
Burgundian vineyards are famously tough to tend,
especially those fortunate patches of dirt blessed with
everything needed to become a Grand Cru. Between
Pinot Noir’s fussiness and Burgundy’s complicated
combination of microclimates and slopes, the returns
seldom justify the laborious work involved.
For this reason, Cistercian monks, the early founders of
the region, began a system of renting, selling or exchanging
their many vineyard holdings: the Abbey of St Vivant sold its vineyard of La Romanée in 1631; the vineyard of Corton (Charlemagne’s legacy) was sold in 1660.
The Code Napoléon further complicated Burgundian
wine-making by stating that all vineyards had to be split equally among the male heirs of the owner, as
opposed to the ancient system in which the eldest received
everything. The result left already-tiny vineyards split into
a dizzying amount of owners – the famous Clos Vougeot
Grand Cru, at 124 acres, has upwards of 80 owners.
Known as the sleeping beauty vineyard, Clos de Lambray
remains the largest monopole parcel in the CÔte d’Or.
Promoted only in 1981 to Grand Cru status, this is modern
Burgundy in its finest form.

Alongside Pétrus, Le Pin is Pomerol’s second legend.
Named after the property’s lone pine tree, bottles from
this tiny 5.2-acre vineyard became the ultimate ‘trophy
wine’ of worldwide collectors during the 1990s.
Purchased in 1979 by Jacques Thienpont, the vineyard was run almost as a hobby at first, but the quality of the
soil and his keep-it-simple wine-making philosophy
meant that the wines shone, not only in great vintages, but also in the lesser. Its rarity value (just 500 cases for the world each year, while Lafite has 29,000) fuelled
collectors’ imaginations as much as its scents and flavours.
Today, there is no serious wine-lover in the world who
does not aspire to taste the elusive Le Pin. Be one of the
few in the world to experience its magic.

Owner Domenico Clerico, one of the most respected
names in all of Barolo, is one of the key proponents of the
modernist movement in the region’s wine-making process,

What words can be conjured up to describe the wines of Vega Sicilia? These truly are special wines, but this is no modern, point-grabbing winery. Spain’s first growth has history, a sense of place and, says wine-maker Xavier
Ausas, a willingness to adhere to time-honoured traditions.
The foundations of these traditions may be found as far back as 1859, when Don Eloy Lecanda Chaves was gifted
an estate by his wealthy father. He returned in 1864 from his travels in Bordeaux with vine cuttings including
Cabernet Sauvignon, Malbec, Merlot, Carménère and,
curiously, some Pinot Noir. Who had this grape of
Burgundy for sale in Bordeaux? The answer is unknown.
Regardless, cuttings were duly propagated and planted and it is fitting that the resulting wines enjoy a certain old, yet stately, air – like period furniture.
Today, Vega Sicilia is regarded as Spain’s most prestigious
wine estate, producing timeless wines of finesse, elegance
and complexity.

Johann Christian Henschke planted a small vineyard on his farm in the Eden Valley in 1862. He was one of many
Silesians who had fled their homeland in the 1840s in
search of religious freedom. By the time the family’s third generation took over the
reins in 1914, these famous Shiraz vines were already more
than 50 years old. Cyril Henschke, the fourth generation,
made the first single-vineyard wine from these vines in
1958.
This historic vineyard takes its name from the beautiful
Lutheran church opposite it. Euphoniously, it is named
Gnadenberg, meaning ‘hill of grace’. This is one of
Australia’s rarest and most exquisite wines. Delicate,
complex and fragrant, with a haunting power on the palate, it is the true personification of grace.

There is no wine region in the world more breath-taking
than Madeira – a volcanic island rising steeply from the
Atlantic Ocean, located 1,000km off the coast of both
Portugal and north Africa. Home to the fortified family’s
most resilient and longest-living wine, there is nothing on earth that quite compares with the experience of an ancient Madeira.
Of the hundreds of families who have produced and
shipped Madeira over the past two centuries, only four
remain – Barbeito being one of them.
In the early 1900s, Mario Barbeito decided that the value of great Madeira could only go up as it became older and
young vintages’ production declined. He wisely built the
business, in the early years, around more modest Madeiras,
while cellaring and protecting the ancient bottles.
In the 1970s, Barbeito was left to his daughter, Manuela,
who gradually began to release some of the priceless older
vintages. She believed that it was time to share her father’s
secret with the world, so that his story could extend beyond
that of her own family and so that many more could
experience these bottles’ rare magic. Those currently resting
in The Principal’s cellar come directly from Mario’s cellar,
his legacy living on through each and every one.
We hope to continue his story, by making it your own – a memory of the moment in which you had the opportunity
to taste a wine as rare and coveted as those mentioned here.
Dating back to the great vintage of 1901, we are privileged
to have these wines here with us – a tribute to Mario’s wish that the ancient wines which he so loved be shared
with the world.
