The Wine List The glass brasserie wine list of 1000 selections encompasses what is one of Australia’s largest collections of fine wine in an international hotel. Our sommeliers & wine waiters are pleased to offer advice as well as to fulfil your requests; explore some of the best Australia has to offer and many great and difficult to find bottles from throughout the world. Housed in climate controlled cellars within Hilton Sydney and glass brasserie’s 3500 bottle wine wall; to the best of our knowledge, the wines in our collection have been kept under controlled temperatures and humidity since their release, and many come direct from the winery, estate or Château. Carefully sourced; we believe each of our older ‘museum’ bottles to be sound; however each bottle has its own history. For some wines of age, there are often no good wines or vintages per se, only good bottles. We will endeavour to find that bottle for you. Low alcohol, no oak, grassy/hay through to citrus and lime flavours as young wines. It demands time in bottle, and rewards by developing from a zesty, grassy, lime and lemony youth, to a crescendo of palate pleasing richness, hinting at the likes of honey, roasted nuts and buttered toast, at 5 to 20 years of age. Brokenwood was founded in the early 1970’s by a trio of Sydney-based solicitors ~ Tony Albert, John Beeston and James Halliday. Iain Riggs joined Brokenwood in 1982, introducing new winery equipment and facilities specifically for premium white wine production. At five to ten years Hunter Semillon takes on a green-gold hue and rich toasty characters. It is best known as a component in the classic Champagne blend, however, in the Grampians region of Victoria, Pinot Meunier was known at one time as Miller's Burgundy and used to make still red varietal wine. Pinot Meunier produces aromatic, lightly coloured red wine with crisp acid, red berry fruit flavours & distinct smoky notes that dominate as the wine ages. All vineyards are farmed bio-dynamically. Romanée Conti : Undisputable ‘Pearl of Burgundy’, as it has been called since 1794. Only one person is allowed to prune the vines of this small, 1.6 hectare vineyard which produces the pinnacle wine of the estate. A wine with supreme finesse, elegance & complexity. It is rich and concentrated yet ethereal & sublime. Only around 450 cases are produced each year. La Tâche : Holding a remarkable reputation for producing great pinot even in the vintages considered to be difficult. It was the only wine produced by the Domaine in the lesser vintages of 1950 & 51. La Tâche is said to be a more flamboyant wine than Romanée Conti. It has a great intensity, colour and structure, a result of vines with an average age of 47 years. Richebourg : Just under half the vineyard (3.51 hectares out of 8.03) belongs to The Domaine, spread over several plots. This is always a robust wine, deep in colour, sometimes equal to the desirable La Tâche. Richebourg is structured yet rich and brimming with sweet fruit and incredible length. Romanée-Saint-Vivant : The Domaine is the largest holder of land in Romanée-Saint-Vivant and in the last 10 years this vineyards reputation has grown to rival Richebourg. Described by the Domaine as flirtatious : one cannot help loving it. Behind this grace resides a strength in such perfect balance that, at first, it was imperceptible. The Gaja winery, located in the village of Barbaresco in the Langhe area of the region of Piedmont, in Italy, was founded in 1859. Angelo Gaja, perhaps the most influential individual in Italian wines over the last 30 years, came from a family of wine makers, but it is probably not true to say that Angelo followed in his father's footsteps. For Angelo Gaja has set his own standards. Gaja revolutionised the wine business in Barbaresco and beyond. These rich and textural wines are sometimes described as “liquid sunshine”, as the grapes are generally left on the vine much longer than usual. This allows the berries to store more natural sugar while drying out slightly in the warmth of Australia’s autumn days. Rutherglen Muscat & Topaque are classified under four descriptions that mark a progression in richness, complexity and intensity of flavour. Formerly named Tokay, in 2007, under the terms of the Australia-European Community Agreement on Trade in Wine, Australia agreed to cease using certain European names, including Tokay. A new name was then created and ‘Topaque’ was born; the same in every other way, only the name has changed. ‘Rutherglen’ – is the foundation of the style; displaying the fresh raisin aromas, rich fruit, clean spirit and great length of flavour on the palate which are the mark of all the fortifieds of Rutherglen. Average age 2-5 years. Residual sweetness 180-240 grams per litre. ‘Classic’ – displays a greater level of richness and complexity, produced through the blending of selected parcels of wine, often matured in various sizes of oak cask to impart the distinctive dry ‘rancio’ characters produced from maturation in seasoned wood. Average age 5-10 years. Residual sweetness 200-280 grams per litre. ‘Grand’– takes the flavour of Rutherglen fortifieds to a still higher plane of development, displaying a new level of intensity, depth and concentration of flavour, mature rancio characters, and a complexity which imparts layers of texture and flavour. Average age 10-15 years. Residual sweetness 270-400 grams per litre. ‘Rare’– is rare by name and by nature. These are the pinnacle – fully developed and displaying the extraordinary qualities that result from the blending of selected parcels of only the very richest, and most complete wines in the cellar. Rare Rutherglen fortifieds are only bottled in tiny quantities each year, but for those privileged to taste them, these are wines of breathtaking complexity, texture and depth of flavour. The following States and zones described are of the regions most represented on the glass wine list. Western Australia New South Wales was the first State to grow the grapevine, and is home to 5 of Australia’s oldest wine companies and/or continuously operating wine brands; Wyndam Estate (1928); Lindemans (1843); Draytons Family Wines (1853); Mudgee Wines (1856) and Tyrrell’s (1858). Boasting an incredibly diverse range of climates, NSW is famous for many varieties, including Semillon in a style unique to Australia. New South Wales Western Australia Two decades ago, Margaret River was better known for the classic surf break lying not far from the junction of river and sea but entrepreneurs have driven the development of vineyards and wineries that have overcome the State’s geographic isolation and carved their mark not just within Australia but around the world. This region has become known for zesty Sauvignon Blancs, fine Chardonnay, superlative Cabernet Sauvignons and bold Zinfandel. Victoria is tucked into the south-eastern corner of the Australian mainland. It has many diverse regions. The warm-climate regions span the northern and western rim of Victoria and include the Murray Darling, Swan Hill and Rutherglen, which has carved a reputation for unique fortified wine styles such as Muscat. These wines boast hedonistic sweet fruit flavours concentrated through long dry Victoria autumns. Victoria’s other wine regions are general cooler than those of the States to the north and west.
