The Wine List
The glass brasserie wine list of 1000
selections encompasses what is one of
Australia’s largest collections of fine wine
in an international hotel.
Our sommeliers & wine waiters are
pleased to offer advice as well as to fulfil
your requests; explore some of the best
Australia has to offer and many great
and difficult to find bottles from
throughout the world.
Housed in climate controlled cellars
within Hilton Sydney and glass brasserie’s
3500 bottle wine wall; to the best of our
knowledge, the wines in our collection
have been kept under controlled
temperatures and humidity since their
release, and many come direct from the
winery, estate or Château.
Carefully sourced; we believe each of
our older ‘museum’ bottles to be sound;
however each bottle has its own history.
For some wines of age, there are often
no good wines or vintages per se, only
good bottles. We will endeavour to find
that bottle for you.

suppleness, its moderate body, its velvet smoothness and its sapidity.
Obtained by Charmat method is the ideal system for the production of sparkling wines with
fruity aromas, as this method respects the original character of the fruit.
Col Vetoraz lays on the very top of the homonymous hill next to the "Mont" of Cartizze in S.
Stefano di Valdobbiadene at 400 metres above sea level. Miotto Family settled down in
Col Vetoraz in 1838 and started growing Prosecco and Cartizze grapes.

Australian Semillon
Although not as fashionable as Sauvignon Blanc, Semillon is regarded as a great
and unique wine of Australia. Low alcohol, no oak, grassy/hay through to citrus
and lime flavours as young wines. It demands time in bottle, and rewards by
developing from a zesty, grassy, lime and lemony youth, to a crescendo of

freshness. In addition to the famous Clare or Eden Valleys of South Australia,

there are more fine examples of Riesling from Western Australia’s Great Southern

John and Catherine Thomson planted their vineyard in 1975 at Crawford River, in
far south-west Victoria. The Crawford River vineyard lies at the alluvial edge of a
volcanic lava flow with a mineral-rich soil base. The 11.5 Ha vineyard are mainly
planted with Riesling and Cabernet.

Chenin Blanc
The most famous Chenin Blanc comes from the beautiful village of Vouvray in
France’s Loire Valley. These wines can age magnificently for decades and have
been known to remain in prime condition for more than a century. The wine
develops richness, complexity and depth over time but will never lose its fresh
and fruit driven character.
The cellar of the Domaine Marc Brédif, which dates back to the 10th century, is
one of the most famous cellars in the Loire. In 2km of caves, one million bottles of
Vouvray slowly mature, some well over 100 years old. The winery is owned and
operated by the Baron de Ladoucette, who maintains exceptionally high
standards throughout his wines; his are considered to be some of the finest
examples of Vouvray.

The Chardonnay of France’s Burgundy region is often expensive, but frequently worthwhile.
Considered by many to be the world’s greatest expression of the grape, its renown goes
back many centuries; in 1522 Erasmus wrote: "O happy Burgundy which merits being called
the mother of men since she furnishes from her mammaries such a good milk”. This was
echoed by Shakespeare, who refers in King Lear to "the vines of France and milk of
Burgundy".
The most sublime and the most celebrated estate of Chablis, the wines of Domaine
Raveneau are a rare find exceptional because the vineyard holdings are almost entirely
made of grand cru and premier cru fruit, painfully finite as so few are produced, outstanding
because of their tremendous quality and consistency, and unusual given the modesty of the

Pinot Meunier has a longer history in Australian wine production than Pinot noir. It
is best known as a component in the classic Champagne blend, however, in the
Grampians region of Victoria, Pinot Meunier was known at one time as Miller's
Burgundy and used to make still red varietal wine. Pinot Meunier produces
aromatic, lightly coloured red wine with crisp acid, red berry fruit flavours &
distinct smoky notes that dominate as the wine ages.
Best’s Millers Burgundy vineyard, first planted in 1868, was made up of about 85%
Pinot Meunier and the rest was Pinot Noir. In the early 70’s, 11 rows of 100% Pinot
Meunier were replanted next to the original vineyard. Today the grapes are
hand- picked and sorted, aged in French oak and made with meticulous care.
It is the earliest picked red wine at Best’s with a lighter bodied profile, slightly
woodier profile than its old clone Pinot Noir sibling. The Best’s Old Vine Pinot

What’s a delicate, pernickety grape like this doing in a sun-drenched robust
country like Australia, you might ask.
You’d be asking a good question. Pinot Noir is a challenge to grow in any part of
the world. What’s now emerged is a handful of Pinot Noir styles all Australia’s
own and a proud group they are too. Being a cool climate variety, growers in
the coolest regions are seeing great success; that’s in regions like the Adelaide
Hills, Tasmania, Mornington Peninsula, Geelong, the Yarra Valley and Great
Southern.
In these regions the wines tend to come out strawberry / raspberry- fruited when
young, then get progressively more mushroomy and savoury with age. The best
styles of all come from vines with a little age, which haven’t been harvested too

Produced from what are amongst the oldest Pinot Noir vines in the Yarra Valley,

Domaine de la Romanée-Conti
Considered to be the finest estate in Burgundy and even the world, there is no other wine
that can seduce like Domaine de la Romanée-Conti; also known as ‘DRC’ and ‘The
Domaine’. All vineyards are farmed bio-dynamically.
Romanée Conti : Undisputable ‘Pearl of Burgundy’, as it has been called since 1794. Only
one person is allowed to prune the vines of this small, 1.6 hectare vineyard which produces
the pinnacle wine of the estate. A wine with supreme finesse, elegance & complexity. It is
rich and concentrated yet ethereal & sublime. Only around 450 cases are produced each
year.
La Tâche : Holding a remarkable reputation for producing great pinot even in the vintages
considered to be difficult. It was the only wine produced by the Domaine in the lesser
vintages of 1950 & 51. La Tâche is said to be a more flamboyant wine than Romanée Conti. It
has a great intensity, colour and structure, a result of vines with an average age of 47 years.
Richebourg : Just under half the vineyard (3.51 hectares out of 8.03) belongs to The Domaine,
spread over several plots. This is always a robust wine, deep in colour, sometimes equal to the
desirable La Tâche. Richebourg is structured yet rich and brimming with sweet fruit and
incredible length.
Romanée-Saint-Vivant : The Domaine is the largest holder of land in Romanée-Saint-Vivant
and in the last 10 years this vineyards reputation has grown to rival Richebourg. Described by
the Domaine as flirtatious : one cannot help loving it. Behind this grace resides a strength in
such perfect balance that, at first, it was imperceptible.
Échézeaux : Sourced mostly from Les Poulaillères, considered to be one of the best vineyards
within the grand cru. This is the most accessible wine of the Domaine; in price and because
the wine is approachable in its youth with fullness and finesse.

Iconic Australian Shiraz
Australia has many wines worthy of the ‘Iconic’ title, below are just a few.
Shiraz (the same grape as Syrah in France’s Rhône Valley) was one of the first vine
varieties to arrive in Australia in 1832. So at home was it on its new turf, plantings
prospered and it wasn’t long before the local population began to take it for
granted. However, by the 1980s people had begun to realise how versatile it
could be, its character changed depending on the region in which it was grown.

Grange is sourced from Kalimna in the Barossa Valley, McLaren Vale, Adelaide (Magill) and
Padthaway in South Australia. Penfolds Grange displays fully ripe, intensely flavoured and
textured Shiraz grapes in combination with new American oak. The Grange style is the
original and most powerful expression of Penfolds' multi-vineyard, multi-district blending
philosophy.

Hill of Grace is a single historic vineyard located in the Eden Valley of South Australia. The
century-old Shiraz vines were planted around the 1860s by an ancestor, Nicolaus Stanitzki.
This 100% pre-phylloxera Shiraz vineyard lies opposite an old Lutheran Church, built of local
stone, which was euphoniously named Gnadenberg, meaning ‘Hill of Grace’.

Torbreck Vintners was founded by David Powell in 1994. The flag-ship wine, RunRig, is a wine
that exhibits so much power and latent richness some say that it could easily be mistaken for
the hugely concentrated wines sourced from the sun drenched hill of Hermitage in France.
The newest super-premium to join the Torbreck line up is The Laird. This vineyard is perfect in
every way. It is South East facing, completely dry grown, meticulously hand tended, farmed
by a grower with a lifetime's experience, on typical Western Barossa soil - brown loam over
red clay over limestone - and planted with one of the original Barossa clones. However, this
vineyard also has an "X factor" which gives the wine an extra something that cannot be fully

Winemaker Tim Kirk's ethereal and evocative Clonakilla Shiraz Viognier is perhaps one of the
most important advances in the development of Australian Shiraz since the release of 1952
Penfolds Grange Hermitage. Clonakilla, meaning "Meadow of the Church" and located in a
gently south facing fold of the cool southern tablelands at Murrumbateman near Canberra,
was established by CSIRO research scientist John Kirk in 1971. Fourth son Tim is a theologian
turned winemaker, learning his craft from his father and mentors Bailey Carrodus of Yarra

Australia has been growing Cabernet Sauvignon for more than 100 years and our own
Langhorne Creek region is home to the world’s oldest officially recorded Cabernet
Sauvignon vineyard – 2 acres planted in 1891. It was the region of Coonawarra, in the
1970s, which first brought international attention to Australia’s version of this grape with its
intense fruit flavours & a rich, seductive palate. Many regions now produce excellent ‘Cab
Sav’ which can happily age for many years & develop those cigar box, spice & cassis notes
that the varietal is famous for.

Typically known as Claret in the UK, France’s Bordeaux is the home of Cabernet Sauvignon
and Merlot. This region of France produces the famous ‘First Growths’, a classification from
1855 which lists the top ranked wines; some of which are the most expensive Cabernet
based wines in the world.
Château Léoville Las-Cases is said to be the pre-eminent estate in all St Julien. Considered
the first challenger to the first growths. In 2008, a Cornell University study suggested that it
should be promoted to first growth status; an opinion based on ratings of the wine over 35
vintages, from 1970 to 2005.

Iconic Spanish Reds
Spains most prestigious wine estate, Bodegas Vega-Sicilia, was founded in 1864 by Don Eloy
Lecanda y Chaves. He planted Bordeaux varietals (Cabernet Sauvignon, Merlot and
Malbec) in the arid Ribera soils, as well as the local grape, Tinto Fino. The Bodega, which is
located to the east of Valladolid, now has 140 hectares of vines. The estate's top wine,
Único, is aged for up to 10 years in a mixture of French and American wood, both large
wooded vats and new barriques. Valbuena 5◦ is released after 5 years of ageing. The wines
of Vega Sicilia are renowned for their complexity, intensity and longevity and are amongst
the finest in the world

The team at Roda are not merely dedicated, they are detail-obsessed. Perhaps the most
impressive (mahogany-scented) winery to set foot in; everything is about the production
and retention of grape quality - the modern approach to wine through viticulture is
nowhere given more commitment. All of the fruit is off vineyards in excess of 30 years (some
up to 80 years old), grown organically. Fermentation in foudre, and aged in French barrels,
with a minimum of oxidative handling, and neither filtered nor fined.
Significantly, each vintage is made "on its merits" - work levels, style, etc are responses to

Spanish Reds
Spain produces some exciting, world class red wines from regions such as Rioja & Ribera del
Duero famous for their rich and savoury Tempranillo production. Rioja Alta is known more
for its "old world" style of wine, which can tend to be a little lighter; the Rioja Alavesa
produces wines with a fuller body & higher acidity; and the Rioja Baja wines are very
deeply coloured and can be highly alcoholic with some wines at 18% abv.
Ribera del Duero & Rioja Tempranillo are complex wines capable of long aging.
Priorat produces strong, intensely coloured and flavoured red wines that come from old,
low yielding vineyards. Monstant, which surrounds the Priorat, tend to produce wines of a
more refined character but equally complex; both use among others the Cariñena,
Garnacha, Cabernet Sauvignon, Merlot and Syrah grapes.

Barolo & Barbaresco Italy’s Noble Twins
Among the most enticing Italian wines, Barolo and Barbaresco of northern Italy’s Piedmont
can be the most sublime and the most difficult to appreciate. Both are crafted from the
thick-skinned, late-ripening Nebbiolo grape, which has proven unforgiving to almost
anyone who tries to grow it anywhere but its native Piedmont. Extremely robust with aromas
reminiscent of black fruits, tar & leather; high in both tannin and acidity, it takes an
experienced hand to produce really great Nebbiolo that is both enjoyable in its youth &
capable of refinement with extended aging.
The Gaja winery, located in the village of Barbaresco in the Langhe area of the region of
Piedmont, in Italy, was founded in 1859. Angelo Gaja, perhaps the most influential
individual in Italian wines over the last 30 years, came from a family of wine makers, but it is
probably not true to say that Angelo followed in his father's footsteps. For Angelo Gaja has
set his own standards. Gaja revolutionised the wine business in Barbaresco and beyond.
The word ‘Sorì’ means a hilltop with a southern exposure. ‘Sperss’ is Piedmontese for
nostalgia, used in reference to a return to making Barolo after several years of absence.
‘Costa Russi’ is a single vineyard acquired by the Gaja family in 1967. The name comes
from the term "costa", the side of a hill facing the sun, and "Russi" a nickname of the
previous owner.

Liquid Sunshine
The Muscat & Topaque from north-east Victoria are truly one of Australia’s “gifts” to the
word of wine. These rich and textural wines are sometimes described as “liquid sunshine”,
as the grapes are generally left on the vine much longer than usual. This allows the berries
to store more natural sugar while drying out slightly in the warmth of Australia’s autumn
days. Rutherglen Muscat & Topaque are classified under four descriptions that mark a
progression in richness, complexity and intensity of flavour. Formerly named Tokay, in 2007,
under the terms of the Australia-European Community Agreement on Trade in Wine,
Australia agreed to cease using certain European names, including Tokay. A new name
was then created and ‘Topaque’ was born; the same in every other way, only the name
has changed.
‘Rutherglen’ – is the foundation of the style; displaying the fresh raisin aromas, rich fruit,
clean spirit and great length of flavour on the palate which are the mark of all the fortifieds
of Rutherglen. Average age 2-5 years. Residual sweetness 180-240 grams per litre.
‘Classic’ – displays a greater level of richness and complexity, produced through the
blending of selected parcels of wine, often matured in various sizes of oak cask to impart
the distinctive dry ‘rancio’ characters produced from maturation
in seasoned wood. Average age 5-10 years. Residual sweetness 200-280 grams per litre.
‘Grand’– takes the flavour of Rutherglen fortifieds to a still higher plane of development,
displaying a new level of intensity, depth and concentration of flavour, mature rancio
characters, and a complexity which imparts layers of texture and flavour.
Average age 10-15 years. Residual sweetness 270-400 grams per litre.
‘Rare’– is rare by name and by nature. These are the pinnacle – fully developed and
displaying the extraordinary qualities that result from the blending of selected parcels of
only the very richest, and most complete wines in the cellar. Rare Rutherglen fortifieds are
only bottled in tiny quantities each year, but for those privileged to taste them, these are
wines of breathtaking complexity, texture and depth of flavour.

Madeira Bottled
The islands of Madeira have a long winemaking history and their fortified wines are some of
the longest lived wines in the world, even after opening. Madeira is noted for its unique
winemaking process which involves heating the wine up to temperatures as high as 60
degrees for an extended period of time and deliberately exposing the wine to some levels of
oxidation, this replicates the historic sea journeys the wines used to take for sale in the UK. The
styles of these luscious and complex fortified wines vary from the bone dry Sercial, followed
by Terrantez (nowadays this varietal is practically extinct) to Bual (or Boal) and Verdelho to
the sweetest style, Malvasia sometimes known as Malmsey.
A privately owned company dating back to 1850, Henriques & Henriques are the leading
independent Madeira. These extremely rare wines were shipped directly from the cellars.

Australian Wine Regions
Australia has about 60 wine regions located across the country with 103 “defined
geographic indications” for wine growing districts covering zones, regions and subregions. The following States and zones described are of the regions most
represented on the glass wine list.
Western Australia
New South Wales was the first State to grow
the grapevine, and is home to 5 of Australia’s
oldest wine companies and/or continuously
operating wine brands; Wyndam Estate
(1928); Lindemans (1843); Draytons Family
Wines (1853); Mudgee Wines (1856) and
Tyrrell’s (1858). Boasting an incredibly diverse
range of climates, NSW is famous for many
varieties, including Semillon in a style unique
to Australia.

Victoria is tucked into the south-eastern corner of the
Australian mainland. It has many diverse regions. The
warm-climate regions span the northern and western rim
of Victoria and include the Murray Darling, Swan Hill and
Rutherglen, which has carved a reputation for unique
fortified wine styles such as Muscat. These wines boast
hedonistic sweet fruit flavours
concentrated through long dry

regions are general cooler than
those of the States to the north

Yarra Valley region, just half an
hour’s drive from Melbourne,

South Australia produces the majority of
the nation’s wine. The State also boasts
some of the oldest vines in the world. The
venerable old vines found in South
Australia’s Barossa Valley, McLaren Vale,
Clare Valley and Adelaide Hills, through
their
isolation, survived
the
great
phylloxera plagues that wiped out the
vines of North America, Europe and
Australia’s eastern vineyards.
