It is the Burgundian way that has convinced many of the world's vignerons to forgo heavy handed intervention and barrel treatment for the purpose of rediscovering the magic of the terroir the grapes are grown in. It is for this reason that we have decided to break our menu into regions for we feel, as the Burgundians, that great is made in the vineyard. BURGUNDY -‐ CHABLIS Surrounding the sleepy northeastern French village of Chablis, far removed from the rest of Burgundy are the vineyards of what many people call the greatest and most precise expression of Chardonnay. It is where Benedictine and Cistercian monks introduced Pinot Noir and Chardonnay and meticulously recorded 1000 years of vintages while establishing a tight network of stone wall divided micro climats called clos. The Côte de Nuits and the Côte de Beaune further divide the Côte d'Or, each roughly measuring 15 miles along the Route des Grands Crus. It is hard to think of the Loire as a single appellation given the enormous variety of wines made here. From the crisp, saline Melon de Bourgogne of Muscadet, to the oxidized Chenin Blanc of Savennières, or the honey Chenin Blanc of Vouvray, to the grassy Sauvignon Blanc of Sancerre, the grapes and styles and soils vary tremendously. The great vineyards of Friuli stretch into the schistous ponco stones of the Julian Alps and even spread over into Slovenia, which was divided from Italy in 1945, and down along the iron rich Adriatic coast to the old Austrian resort town of Trieste. Here the world's greatest white grape finds its home along the scenic hills of the Rhine river valley. The profoundly aromatic and tart Riesling grape is unparalleled in longevity and succeeds in a myriad of styles. Although often taken as a sweet wine, Riesling is most often fermented dry to accentuate its piercingly tart and clean finish. German wine labels can be hard to read since the 1970's with the inclusion of the Prädikat designations. Now the German wine producers group (VDP) is passionately reviving great vineyard sites and promoting wines of a dry style. From such a cool climate, expert German winemaking crafts wines of stunning length and complexity sure to find a home among seasoned collectors and newcomers alike. MOSEL The rolling Mosel river with its steep slate cover banks and charming patchwork of villages is the benchmark for classically styled Riesling. The crisp waters of the Mosel which flow down from the Vosges mountains reflect enough sunlight back onto these undulating slopes that would otherwise never produce fruit. From Rüdesheim to Wiesbaden, the Taunus Mountains tower over the north banks of the river. The early thaws along the Taunus have long been attributed to sunlight reflecting from the Rhine and have permitted grape growing since the 9th century.
