Passed back and forth between the French and the Germans for the past 2000 years Alsace has developed a
sort of hybrid mix of the two cultures. Viticulturally, the grapes are hybrids as well. The Germanic
RIESLING, GEWÜRZTRAMINER mix with French PINOT GRIS, PINOT BLANC and MUSCAT to make
age-worthy wines of exceptional depth and complexity.

The following two pages contain our collection of RIESLINGS, GRUNER VELTLINERS, PINOT BLANCS,
and other aromatic grapes from these regions of the world. Often mistaken for entirely sweet wines, the
overwhelming majority of the following wines are dry, as we are convinced that this style best compliments
the seasonal food our kitchen creates. In Germany look for the word TROCKEN to designate the drier wines,
or GROSSES GEWACHS for dry wines of the highest quality. For wines of the fruitier style, SPÄTLESE or
KABINETT are the designations to search out.

A N ESTATE WORTHY OF ITS OWN SECTION
VON SCHUBERT’s MAXIMIN GRÜNHAUS is our favorite winery in Germany. Based along the Ruwer River,
near the Mosel, there are records of the Monastery of St. Maximin growing vines on the three hills of Maximin
Grünhaus beginning in the 7 t h Century AD, and the property has been in the hands of the Von Schubert family
since the late 19 t h century. The wines are consistently some of the most balanced wines on the planet,
walking the razor’s edge between sweet and tart as beautifully as any fruit driven wines we have ever tasted.
As mentioned above, the estate consists of three vineyards. The BRÜDERBERG is the smallest vineyard,
separated from the other two, the wines from this vineyard are rustic and spicy, and it historically provided
the 3 liter daily ration to the monks, or the brothers, of the monastery. The HERRENBERG wines were
reserved for the Abbot’s choirmasters. Grown on red slate, the grapes in the vineyard provide peachy,
delicate extremely long lived wines. Finally the ABTSBERG vineyard, producing the most balanced and
complex wines of the three vineyards, provided the wines to the Abbot himself. The blue slate soils have had
vines grown on them for over a thousand years, and they produce some of the most age-worthy white wines on
the planet.

THE FINGER LAKES have become one of the premier cool climate growing regions in the United States and
here at the restaurant we love bright crisp white wines. In the time since the vineyards first were planted
with vinifera vines in the late 1970s on the verdant slopes surrounding, Keuka, Seneca, Cayuga, and
Canadaigua Lakes, the quality of these dry wines has risen to the point of challenging some of the great wine
makers of Austria, Germany and Alsace. Below we have a collection of producers and grapes that we think
highlight the bounty and quality of our neighbors to the west.

A REGION OF NOTE …
WESTERN AUSTRALIA is about as far away from the world’s other wine growing regions as you can get. The
winemaking regions are primarily located around the far southwestern coast and are concentrated around the
regions of Great Southern and the Margaret River, and in our opinion it is one of the most interesting and
underappreciated wine regions in the world. Despite the shark attacks, people have been moving to this cool
climate to make some of the most balanced seamless wines in the New World for the last several decades,
with the Cabernet Blends, Rieslings, and the Chardonnays being particularly unique.

The Loire Valley is primarily known for production of world class white wines, with Sancerre, Pouilly-Fumé,
and Muscadet being household names. What is less well known is the Loire Valley’s production of world class
red wines. Made, most famously, from Pinot Noir and Cabernet Franc, there are also great wines made from
Gamay, Malbec, and lesser known red grapes such as Pinaeu D’Aunis and Grolleau.

The Rh ô ne Valley two distinct regions: the North with SYRAH as the only red grape permitted, and the
South, where blends of GRENACHE, MOURVEDRE, and SYRAH are grown on more gentle slopes. The
wines from the north are inky, peppery and intense, with firm tannins, while the wines from the south are
ripe, full-bodied but less tannic.

A R EGION W ORTHY OF A TTENTION
BANDOL, situated on the Mediterranean Coast west of Marseille in the French Riviera, is all that one thinks
of when they think of the Provençal countryside. While Provence is often thought of mainly as a region for
rosé these red wines are some of the most fascinatingly aromatic wines in the world and some of our favorite
full bodied wines. Bushes of lavender, thyme, sage, and rosemary intersperse with the grape vines, which in
this part of France are primarily the MOURVÈDRE grape, supported by CINSAULT and GRENACHE,
reaches its apogee here in one of the sunniest regions in Europe. The Mistral winds and the long growing
seasons provide ample time for the finicky grape to become perfectly mature. Able to age for decades, the
flavors of the wild herbs in the region percolate into the wines which make them natural companions to spring
lamb, roasted meats and bouillabaisse which make the wines of Bandol some of our favorite all-weather wines.

Piedmont is the most nuanced and complex of the world’s famous growing region. If this region was in France
it would be planted solely with NEBBIOLO and that would be that. The Italians, on the other hand like
challenges and variety, so along with grape of kings, there are a host of other grapes and vineyards throughout
this region in the foothills of the Alps. BAROLO and BARBARESCO are the famous Nebbiolo regions and
they are some of the greatest red wines in the world, but ASTI and ALBA deserve mention for the age worthy
and versatile BARBERAS and DOLCETTOS, and there is nothing like a properly aged bottle of VERDUNO

The incredibly steep, trellised Alpine vineyards on the Italian-Swiss border are where the villages of the
Valtellina make wine from Chiavennasca, more commonly known as Nebbiolo. This is one of the most
beautiful and breathtaking wine regions on the planet, and at their best these wines are Nebbioli for Burgundy
lovers. The wines are exceptionally aromatic and medium-bodied with beautiful complexity. For fuller bodied
wines the wine makers dry the grapes in the style of Amarone to make a richer wine called SFORZATO or
SFURSAT.

GIUSEPPE QUINTARELLI was inarguably the king of Valpolicella. For centuries the wines from the hills
surrounding Verona were Italy’s answer to Beaujolais Nouveau, easy drinking, fruity styled wine made in
massive quantities. When Quintarelli took over his father’s estate in 1950 he ushered in a sea change in
attitudes and expectations of the wines from this region. Using a centuries old tradition, unique to the region,
of drying the grape bunches until they are almost raisins and then pressing them for their juice, Quintarelli
made some of the most magically intense and complex wines ever made. Whether it was his entry level wine
PRIMOFIORE, which combined Cabernet grapes with the traditional Valpolicella and Amarone grapes of
Corvina, Rondinella, and Molinara, his majestically complex AMARONE or sweet RECIOTO, or his answer to
Super-Tuscan wines, ALZERO, made entirely from dried Cabernet Franc, Quintarelli’s wines are benchmarks
for the region and country as a whole.

Here at Colicchio & Sons we love balanced old wine, and the winemaking in California was a paragon
of that balance and age-ability in its Golden Years beginning in the 1940s. In those days the wineries
were often owned and ran by the children of European immigrants and the ones that weren’t were
influenced by the mentality of those that were. The wines were being made by the people who
owned the wineries and the idea of consulting winemakers and making wines for big critical scores
was rare and it was a more artisanal time. We love this era of wines in California, which we see as
running until approximately the 1994 vintage. Prior to the early 90s the alcohol levels remained
lower, the acidity was higher, and the wines were much more balanced. The wines were less showy
in their youth but they are tremendous now. It was these wines that put California on the map, and
they have a great sense of place. When the FBI recently arrested the wine huckster Rudi Kurniawan
on charges of selling millions of dollars of fraudulent wines, they found an enormous trove of old
California wine that he was relabeling and passing off as the famous wines of Europe. We’re more
honest here. If the wines are good enough to pass as 40 year old Château Latour, why not sell them
as what they are?

The vineyards of CHATEAU MONTELENA been under vine since they were planted on 254 acres
of rugged land by Alfred Tubbs, who had made a fortune in the rope business, in 1882, and the rocky
land in Calistoga, located in the far north of Napa Valley, has been a standard bearer of the potential
and quality of grape growing in Napa Valley since the Jim Barrett bought the property and replanted
the Alicante Bouchet, and Chasselas vines with Cabernet Sauvignon and Chardonnay 90 years later.
Made famous by the now legendary ‘Judgement of Paris’, the estate has always made wine that is
unique to Napa Valley. In blind tastings Montelena stands out for it’s cedar-y, aromatic, nose, a wine
of balance and nuance. Made traditionally, at first by Mike Grgich, and since 1982 under the eye of
Jim’s son Bo, the wines never bought in to the over ripeness and Parker-driven power that swept the
valley during the 1990s. The Cabernet ages beautifully, and remains to this day a benchmark for the
style of earth driven California Cabernet Sauvignon that we love here at the restaurant.

The Lett family’s EYRIE VINEYARDS is arguably the most important Pinot Noir producing winery
in the United States and definitely the most important in Oregon. David Lett was a graduate of UC
Davis in the early ‘60s when, like many people in the ‘60s, he decided to forgo conventional wisdom
and move to a part of the country a bit off the beaten path. That place was the Willamette Valley in
Oregon and his became the first winery to plant Pinot Noir and Pinot Gris in the state. Lett planted
clones of Pinot Noir that originated in Switzerland which were smuggled into the US in suitcases and
in 1970 he released his first vintage. In 1979 and 1980 his 1975 South Block Pinot Noir came in third
and second respectively, in competitions pitting French Pinot Noir versus American and it put
Oregon on the map. Never one to make showy wines for big scores, the Eyrie vineyards Pinot Noirs
are testaments to the elegance and age-ability. We have assembled a collection of his famed South
Block, made in small quantities from 10 rows of vines. These wines were never released to the
public, and these rarities, made by David, who died in 2007, are testaments to the beauty and
potential of Oregon Pinot Noir.
