THINK AGAIN!” By: Stéphanie Bureau, Naturopath alcium instantly comes to mind whenever bone health is mentioned; iron - whenever blood and anemia is the topic at hand - sodium is typically associated with blood pressure issues and of course potassium is inextricably linked to bananas...But magnesium is far more of an enigma to many people. In fact, magnesium may well be the most overlooked and unappreciated essential mineral there is. Ironically enough though, magnesium is also of vital importance to maintaining human health. As the fourth most abundant mineral in the body, magnesium is found in bones, teeth, and red blood cells, and is an essential element required for proper functioning of the nervous, muscular and cardiovascular systems. In fact, magnesium is responsible for over 300 enzymatic reactions and is found in all of the body’s tissues, but primarily concentrated in the bones, muscles, and brain. It is required for the production of cellular energy (ATP), to help stabilize membranes, to ensure muscle relaxation, as well as for calcium, phosphorus, potassium and vitamin C metabolism. So important is this essential mineral in fact, that there are over 3,500 medical references to conditions related to its deficiency. Unfortunately however, in most of the developed world, magnesium deficiency is probably the most common nutritional deficiency. Magnesium Deficiency To fully appreciate the scope of this essential mineral, one need only take a look at some of the primary indications for which it is used therapeutically: muscle cramping or twitches, sleep difficulties, irritability, anxiety, depression, attention deficit, palpitations, constipation, anal spasms, headaches and migraines, chronic pain and chronic fatigue conditions, asthma, diabetes, metabolic syndrome, brittle bone disease, osteoporosis, high blood pressure, hormonal difficulties, menstrual cramps, irritable bowel syndrome (IBS) and reflux, among various other conditions. Clearly, a whole laundry list of symptoms ranging from the mild to the far more serious, which are associated with a magnesium deficiency. To Supplement Or Not To Supplement. . . That Is The Question Figuring out whether or not you may be in need of supplemental magnesium is not always an easy feat. The fact of the matter is that magnesium levels can be affected by a multitude of factors such as excessive intake of alcohol, salt, coffee, sweating, exposure to prolonged or intense stress, chronic diarrhea, heavy menstruation, use of diuretics, antibiotics and other drugs, as well as certain intestinal parasites. Add to this the fact that the magnesium we do consume is often of low quantity, isn’t highly bioavailable and poorly absorbed from traditional food sources and run of the mill multivitamin/mineral formulations, and it’s no surprise that so many are deficient in an essential mineral of such importance. In fact, despite how easily it can be found in various foods in the diet, studies have shown that between 68-75% of North American adults are magnesium deficient. As such, supplementation would clearly be of great benefit to a great many of us. The Question Then Becomes: Which Magnesium In their natural form, minerals are unusable by our bodies, and because minerals are inorganic elements, they must first be converted to an organic or biological compound, a process known as chelation, in order to be absorbable by the body. This is naturally done as a normal physiological part of the digestive process: when an inorganic mineral presents itself, a chemical process gets under way, chemically bonding the inorganic molecule to an organic one. Indeed probiotics have gone increasingly mainstream in recent years and are now not only found in abundance in your friendly neighborhood health food store, but are also a permanent fixture in the majority of pharmacies and most run of the mill grocery stores. In fact, so popular have probiotics become, that they are increasingly added to yogurts to bolster their beneficial bacterial count, as well as to various dairy based beverages, fruit juices, and all kinds of healthy snacks. Taking it one step further down the mainstream route, many hospitals are now keeping probiotics on hand should patients develop tricky-to-treat bacterial GI infections. So let’s say we’re agreed - most people have probably heard of probiotics ... the question then becomes: do most people understand what probiotics ARE and what incredible benefits they offer? 8 Extraordinary Health™ • Vol 26 101 Going Beyond The Name If we are to start at the beginning and explore the word itself, it would seem that the root of “probiotic” comes from the contraction of the Greek words pro, meaning “promoting” and biotic, meaning “life.” From there it is easy to understand that the word basically denotes a substance that stimulates the growth of microorganisms, especially those with beneficial properties (such as those of the intestinal flora). In fact, in general terms, probiotics are defined as live microbes which, when taken in adequate amounts, confer a definite health benefit to the person taking them. To put it even more plainly, probiotics are what are typically referred to simply as “good bacteria.” A little banal as far as a tagline goes, but if we’re trying to be on point without going into much detail, that is the basic gist of it. I propose we peel the onion a tad further. . . A Little History Some Key Benefits For most people, the word probiotic conjures up images of thick gooey yogurt, and while that isn’t entirely wrong, it is however far too limiting and may lead us to dismiss friendly bacteria as a mere marketing gimmick or the latest food fad. When all is well, good bacteria should make up about 90 percent of your gut microflora. That said, the bacterial landscape of the digestive track is in a constant state of flux due to a variety of factors such as diet, stress, medication, heredity, illness, and many, many more of which we don’t fully appreciate. Though the growing body of scientific The truth of the matter is that probiotics have been a subject of much interest among the scientific community since the beginning of the twentieth century. In fact, it was Russian scientist and Nobel laureate Elie Metchnikoff who first suggested that the gut flora could be modified and that harmful microbes could be replaced by beneficial ones, and ultimately, health could be bolstered. Metchnikoff proposed that intestinal toxicity was caused by putrefactive bacteria that generate toxins in the large bowel. He described how the proteolytic bacteria, clostridia, that exist as part of the gut flora produce toxic substances such as phenols and ammonia through the digestion of proteins. He believed that intestinal toxicity could directly contribute to the aging process, but that this process could be suppressed by modifying the gut flora to replace harmful microbes with beneficial ones. Metchnikoff’s approach proposed the ingestion of fermented milk to help establish harmless bacteria in the gut, decrease the body’s pH, and thus provide an environment entirely unfavorable to the growth of proteolytic bacteria. Metchnikoff took his hypothesis one step further and began testing out his fermented milk theory on himself - he later reported that his health had greatly benefited from the exercise. Since Metchnikoff’s early musings, solid scientific research on the validity of using probiotics for health maintenance has been multiplying quickly. In fact, the bulk of current scientific research on probiotics clearly shows that live active cultures (friendly bacteria) can help prevent and treat a surprisingly wide variety of ailments - many of which people would not think to associate with the gut. evidence on the subject is already quite robust, we are still merely starting to learn about the importance of maintaining a healthy cohort of bacteria in our digestive tract on a regular basis to bolster our overall health and quality of life. Let’s explore certain key areas in which probiotics can be of particular benefit. Digestive Health Bad dietary habits such as consuming too much sugar nourishes the harmful/pathogenic bacteria yeast and fungi that live in the gut, which can actually harm you in many more ways than merely by impacting insulin resistance. It cannot be repeated enough: most people simply do not realize that 80 percent of the immune system is located smack dab in the middle of the digestive tract (in the gut that is!). As such, it becomes evident why a healthy gut is of primordial importance to the maintenance of optimal health. While most conventional practitioners may not make the link, many well-versed natural health professionals are well aware of the scientifically proven link that exists between these conditions and poor intestinal health. In fact, it is often said that the gut is quite literally the second brain because it originates from the same type of tissue as the brain. As such, both the gut and brain are said to work in tandem-like fashion, each exerting a decided influence on the other, and each having an inextricable and profound impact on the other. This intricate relationship between the two helps explain the link between neurological disorders and gastrointestinal dysfunction. For example, gluten intolerance is frequently a feature of autism, and many autistic children will show signs of improvement (to varying degrees of course) when they are put on a strict glutenfree, sugar-free diet. Even more interestingly, scientific research has shown that establishing a healthy intestinal flora within the first 20 days or so of life plays a crucial role in appropriate maturation of a baby’s immune system. There are literally thousands of different options on the market, all with varying potencies and ingredients - and complex Latin names like Bifidobacterium bifidum and Lactobacillus rhamnosus, how do you keep them straight, much less know which to select? Truth be told, there are many, many varying opinions on what constitutes the ideal probiotic formulation. Should you opt for a freeze dried formula which will make the product shelf stable for a longer period of time? Should you opt for this or that strain of probiotic and then again, which particular origin is best? Should you get dairy-free?...Of fungal origin? Or whatever else flavor of the month? Honestly, there is no right or wrong answer. The bottom line is that you want a probiotic of high potency from a respected, reliable and quality source... and you want one that comes from as high a number of strains as possible. In fact, what is absolutely key when selecting your probiotic formula is the number of strains that the bacteria come from. Do you have any fond memories of your time in Florida? David Booth: I have a lot of great memories of Florida. Growing up, our family always vacationed down there, so to be drafted and to have the opportunity to play for the Panthers from 2006 to 2011 was very special for me and my family. My brother lives in Fort Lauderdale, and I have a lot of good friends there who visit me every year to watch me play wherever I may be. Florida has been really good to me, and it’s somewhere I’ll always go back to for the rest of my life. EHM: You’ve also played for the Vancouver Canucks and the Toronto Maple Leafs. What’s next for you in your NHL career? DB: I’m a free agent right now. Training camp begins on September 17th, so I have about a month to see what will happen, what will transpire. Anything can change in the matter of a minute. You never know where you’ll end up, but that’s something you train hard for so that when you’re given this opportunity, you’re ready to jump on it. I’m training hard to make sure that whatever team it may be, I’m ready to go. I’m truly looking forward to another season. EHM: What are your off-season hobbies? Do you and Ashley do anything special together? DB: We’re very dedicated to making sure that we get our workouts in and that we’re eating healthy no matter where we’re at. With that said, we’re able to travel a lot. We always go to Park City, Utah. We traveled to British Columbia to visit friends—there’s a very active lifestyle there that we love. This summer, we were in Australia for two weeks. Wherever we go, we try different things; we take in the culture. There are a lot of opportunities out there that we’d like to take advantage of while we’re young and healthy, and before starting a family of our own. My mom made this recipe for me several times when she was helping out right after Murphy was born. Thanks, Mom! INGREDIENTS (USE ORGANIC) • 1 cup millet • 2½ cups water • 1 Tablespoon Garden of Life coconut oil • 6 Medjool dates, pits removed • ¼ teaspoon sea salt DIRECTIONS Heat up a pot and place millet inside, stirring frequently for 2 minutes to toast the millet. Add water and bring to a boil. Reduce heat to medium and add coconut oil, dates and salt. Cook on low, and simmer for 20 minutes. Eat warm. Try adding ½ teaspoon of cinnamon and/or fresh berries on top, if desired. Lasts 5 days refrigerated. It’s gluten free, dairy free, vegan and soy free. Crockpot Chuck INGREDIENTS (USE ORGANIC) • 1½ pounds of boneless beef chuck roast • 2 Tablespoons Garden of Life coconut oil sea salt • 1½ cups beef or chicken broth • ½ cup red wine or an additional ½ cup of broth • 1 28-ounce can of diced tomatoes • 1½ cups chopped carrots • 1 cup chopped onions • 6 garlic cloves • 3 bay leaves • 1 Tablespoon Italian seasoning DIRECTION Turn crockpot on high and add in all ingredients, except the chuck roast. Generously salt the chuck roast on both sides. Place coconut oil in a skillet on stovetop and heat on high. Place chuck roast in skillet and let sear for 2 minutes on each side. Next, place the chuck roast in the crockpot, cover with lid and let cook for 6 hours. Lasts 5 days refrigerated. It’s gluten free, dairy free and soy free. The crockpot became my new best friend after Murphy was born because I could make some delicious recipes that didn’t take a lot of time. Basically, you just throw everything into the crockpot and let it do its magic for several hours, which leaves you more time for baby! SERVES 2-4 Rockin’ Raspberry Smoothie SERVES 1 Gwenola Getting in protein and fat is crucial for me while breastfeeding. Here’s a look at their progress—straight talk from the Hunolts about what it takes to build and live out that dream. I t’s been an interesting first few months carving out the framework of our organic farm that was birthed in our hearts. My wife and I have ideas that are shared by many and pursued by few, but we decided to embark on this adventure anyway. Here’s a bit of a backdrop: I’m an herbalist, and a Territory Manager at Garden of Life, whose uncompromising commitment for organic and non-GMO food and products ignited a deeper passion in me and Branwen to take this even more personally and live it out daily: we wanted to set up a permaculture/ organic/non-GMO homestead consisting primarily of fruits, veggies and medicinal herbs. We are avid organic farmers, and completely embrace the non-GMO movement for many reasons too numerous to list here. Additionally, we wanted a new—or renewed—understanding of human beings’ relationship with their mother, our Earth. We started with a couple tasks—outside of learning how to care for and maintain multiple landscaped acres. Our initial foray into our organic farm venture was to test the theories and suppositions we have apprehended over the years and to provide an empirical structure to judge them against— a rather daunting task. Daunting or not, however, Branwen and I are up to the task because it’s that important to us. We choose to heal, to honor the Earth, to leave our mark—not only for ourselves and our daughter, Estelle, but for generations who follow. How Our Organic Gardening Dream Became a Reality After many years of having a handful of small raised beds growing vegetables, we knew that we wanted an organic garden—a big one. In short, the variety of vegetables that we wanted to grow could never fit in three 8’x 5’ plots. Don’t get us wrong. You certainly can grow a nice amount of food in that space, but one winter squash plant can take over two of those, if it wanted to, and we simply wanted more veggies than just winter squash. We say that we wanted to have a big organic garden, but we never had the opportunity to have one until recently, when we had a chance to purchase a beautiful historical home with a few acres. As you can imagine, we leapt at the chance to buy the house and the land—and to start our mega organic garden. Our dream was becoming reality and our imaginations began running wild to turn the most pressing projects into reality as soon as we moved in. That said, our top priorities (if not essentials) were to create 3,600 square-foot garden and make an 11’ x 12’ chicken coop. Believe us when we say that it’s much easier said than done. Our Garden and Chicken Coop Adventure Take our garden, for instance. The garden needed a rabbit fence ASAP. Why? Apparently, the boxwoods in the landscaping were home to a little rabbit farm, so we couldn’t plant anything until the rabbit fence was in place. So, what we thought we needed to tackle first became more like second and third. The rabbit fence had to happen first. Next up, we realized that you don’t just go create a garden aimlessly, so we also have been putting swales in the garden because we want to incorporate permaculture principles to create as much of a self-sustaining and self-maintaining system as possible. So, what is permaculture? Glad you asked! Permaculture is the concept of creating permanent agricultural systems. This traditionally includes features that allow natural resources such as water to be captured and stored to maximum efficiency. Now for polycultures. . . Polycultures are plants that not only have beneficial or harmonious relationships with each other, but also enrich the soil and support the soil and landscape structure. They could be plants that add nitrogen, plants that have deep roots or mats of roots that create soil stability for slopes, or even plants whose roots loosen compacted soil, allowing water to soak in the landscape and allowing you to work the soil easily. In short, everything is multipurpose. You see? There is much more to gardening than meets the eye. Even water has its ups and downs—literally. We have preserved water in some cases, and lost it monumentally in others, but our goal is to find a way to not need to irrigate our fields in any way. So far, we are succeeding, but we have a lot to learn and only time will tell if this will work over the long haul. While we were scrambling to get our garden going and chicken coop built, we were at the mercy of an exceptionally rainy and steamy summer. You know Mother Nature—she is going to do what she does, so you just have to work around her! Speaking of working around. . . we also had to work around our job responsibilities and commitments as well as family obligations. We knew that going into this, but sometimes we sure wished there were more hours in the day! And then, every so often, there are setbacks because, well, life just happens and being human gets the best of us. For example, we lost some precious time with a window of good weather due to Jason being very ill for five days from—of all things— a bad case of food poisoning. Can you believe it? When it rains, it pours. During that time, Branwen wished that she had some carpentry skills and gigantic muscles like Jason does, but, sadly, she didn’t get her wish, so we had to wait until Jason recuperated. Now for the latest on the chicken coop adventure. The breed of chickens we purchased ended up growing feathers incredibly fast. We have never had chickens fly so early before, and we’ve never seen anything like it! That really upped the ante for us to get the chicken coop livable though, since they were quickly outgrowing their box with the heat lamp. Happily, the almost-fully-feathered chickens are now in their new home—the chicken coop. They love perching on the natural branches and stumps that we fixed inside. We still have to finish some trim and add the roofing shingles though. The next big project is to finish the enclosed run for them to enjoy the outdoors. That too, seems to be an ongoing endeavor, but Estelle absolutely adores those baby chicks and cradles them when we check in on them. It’s so cute! She learns something new every day about organic farming. In the meantime, our garden has been growing like gangbusters! By early August, we had already harvested all of our French salad radishes, and the Daikon radishes were quickly maturing. Beets were being pulled and lacto-fermented, and the carrots were ready too. Peas had already finished reaching their peak by the time the dog days of summer rolled around. The garlic was completed as well. Pepper cress had already gone to seed, while the cucumbers were starting to really produce. The corn was growing fast, and the sweet potatoes were thriving, while the winter squash and watermelon plants were doing what they do best— taking over as much land as possible while sending out flowers galore. Our culinary herbs were happy in the August weather, and the climbing pole beans were flowering. The tomato plants and peppers were fruiting, and we were looking forward to harvesting some of them soon. We even had green and brown cotton plants that were getting happy, and we are excited to teach Estelle about fiber and textiles, helping her understand where her clothes, not just her food, come from. We want to teach her to be a good steward of the earth, and understand that she is a part of the earth, and that we have a non-negotiable, interdependent relationship with plants, starting from the ground up. While we got a late start with our garden, it was nice to know that there was still ample time left in the growing season. August is when most gardens really start booming—the soil is warm, the sun is hot and the electric rain of thunderstorms acts like superfood on the plants. The truth is that many people can start their own garden even in August, since there is still time to plant some short-season crops, such as beets, carrots and bush beans, for a fall harvest. Likewise, many items are planted in the fall for next year’s harvest—onions and garlic, for example. All in all, we say that gardening is downright amazing, so go ahead and get sweaty and dirty while gardening. Not only does it help purge last winter’s funk out of your lymph, but gardening also exposes your body to the wealth of beneficial microbes which are all around you. Truth be told, our bodies are meant to adapt to and incorporate the microbial world found immediately around us by us eating food grown in the local soil. What better way to do that than to garden? Photos by Brian Bowen Smith 24 Extraordinary Health™ • Vol 27 VEGAN STAR Emily Deschanel Makes No Bones About Her Health by Rhonda Price When Emily Deschanel casually tosses around words such as phalanges, manubrium and scapula, it’s because she’s learned a thing or two while playing Dr. Temperance Brennan on FOX Television’s longest-running comedy-drama, Bones. Entering its 11th season in October, the show is based on the career of forensic anthropologist and author Kathy Reichs, and premiered on September 13, 2005. After filming more than 200 episodes in a decade, her character, nicknamed “Bones,” has scrutinized enough skeletons to name nearly all of the 206 bones in the body. When we spoke with her recently, she was happily multitasking at home while feeding her two-month-old son in between interviews. I’ve “I’ve looked at a lot of gross, dead bodies on the show over the years,” Deschanel laughed. “I’m definitely more aware of the fact that there are a lot of things which are not good for your bones. For instance, if your body doesn’t get proper nutrition, it will actually leach what it needs from the bones and cause problems. Once, when I was filming a scene, my character was supposed to offer someone a soda to drink. I said we couldn’t do that because soda is not good for your bones!” In real life, Deschanel’s ancestral bones trace back to French, Swiss, Dutch, English and Irish descent. Born in Los Angeles, the 39-year-old actress and producer is the daughter of Academy Award nominated cinematographer Caleb Deschanel and actress Mary Jo Deschanel, and bears a striking resemblance to her younger sister Zooey, the star of the comedy sitcom New Girl. After graduating from Boston University’s Professional Actors Training Program with a Bachelor of Fine Arts in Theater, she made her feature film debut in 1994 in It Could Happen to You. Following notable appearances in Cold Mountain, The Alamo and Glory Road, she was named one of “six actresses to watch” in 2004 by Interview Magazine. She won the lead role on Bones in 2005 and has been a hit with millions of fans ever since. On the show, Deschanel has a great relationship with co-star David Boreanaz, who plays her husband, FBI Agent Seeley Booth. The duo solve murders and unexplained deaths from clues gleaned from the victims’ skeletal remains, but it’s the dark comedy and affection between the two stars that set the show apart from similar crime shows. Off the set, life is much less dramatic for Deschanel, who is married to actor and writer David Hornsby and lives in Los Angeles with their two young sons. While raising a family and working can be daunting, she is committed to several causes and is an outspoken supporter of how vegetarian and vegan diets can help the environment. With the season premiere of Bones coming up in October, we talked to her about why she thinks the show has been successful for so long and how life has changed at home with a new baby. Extraordinary Health Magazine: Congratulations on the recent birth of your second child! How does life change with a two-month-old? Emily Deschanel: It changes a lot. The balancing act you do with one child and working is multiplied by about 50 times! I’m breastfeeding, so I’m trying to schedule that every two hours during the work day. There are a lot of new challenges, but I don’t mind. My son is so cute! EHM: Is there such a thing as achieving balance with your career, motherhood, marriage and your personal interests? Do you have any tips for others striving to do this? ED: I’ve realized that you simply can’t do everything, at least not every day. For instance, maybe you can’t exercise one day because you need more time with your kids. When I’m not able to be with my sons, I like to leave some reminders for them. I write notes to my oldest son, Henry, and put them in his lunchbox, or I’ll leave a note for him to find near his bed when he wakes up so he’ll know that I’m thinking about him. EHM: You’ve been a vegan for most of your life. Are you raising your kids vegan? ED: They are not 100 percent vegan, and neither is my husband. The kids are about 99 percent vegan, and that’s because I let them eat eggs occasionally with their dad. I think it’s a great way to feed your babies. Henry loves veggies, and he’s totally into it. Someone gave him candy at a party not long ago and he asked, “Why did they give this to me? I don’t eat candy!” So, I’m really proud of him because nutrition is important to me, and I love it when I have these victories. I know it can sometimes be tricky to feed kids, but I openly offer healthy vegan options and cultured vegetables to them all the time. EHM: Describe your diet for us. What are your favorite foods? ED: I have a very alkaline diet. I love to drink green juices and eat lots of salads. I also like to make a habit of eating as many different colors of vegetables as I can. As for treats, of course, there’s fruit and you can even get vegan chocolate. For Easter, I buy little chocolate vegan bunnies and give them to everyone. ED: I don’t sit a lot. I try to stand or walk more because it’s so much better than sitting around. During the day, I’ll do little bursts of exercise such as 30 squats, and then I’ll try to keep moving all day long. I’ve learned it’s not good to avoid exercising entirely just because you don’t have time for a full workout at the gym that day. EHM: Can you tell us about your involvement with the Farm Sanctuary and why it’s important to you? ED: I’ve been a fan of the organization for years and joined their board about a year ago. Everything started when I decided to become vegan 22 years ago after visiting their sanctuary in New York. It was life-changing to see animals growing up in a healthy environment. I like to take Henry so that he can experience these animals and see that they have their own personalities—even the chickens! It’s very eye-opening to go there because they also do a great job of educating about the dangers of factory farms and where our food comes from. EHM: Do you believe leading a vegetarian or vegan lifestyle can help save the planet? ED: Absolutely. Some people don’t seem to realize that factory farms do more harm to the environment than all of our transportation vehicles combined. There are a lot of discussions about the importance of fuelefficient vehicles, but people can do more for the earth by becoming vegan. EHM: Bones is one of the longest-running shows on television. Why do you think the show has resonated with audiences for so long? ED: I believe it’s because it’s not just a procedural show. The tone changes all the time and people are really interested in the characters. I can think of several other shows that are more focused on solving the crime instead of the people who are solving it. Bones is fun to watch because people fall in love, break up and experience difficulties, but it also has a lightness to it. Sometimes, it seems like an action thriller, while other times it feels more like a comedy with a few dead bodies thrown in! EHM: Do you watch other crime shows at home? ED: Not really. Earthy Fall Comforting Recipes Grilled Steak Grilled Vegetables INGREDIENTS: 2 8 oz. grassfed beef steaks VEGGIES: 1 Portabella mushroom 1 zucchini 1 red onion 1 red bell pepper MARINADE: ¼ cup coconut aminos (or 3 Tablespoons wheat free tamari) 3 minced garlic cloves 2 teaspoons grated ginger root 1 Tablespoon sesame seed oil 1 teaspoon maple syrup ½ teaspoon chinese five spice ¼ teaspoon sea salt dash of cayenne pepper Serves 2 DIRECTIONS: Place all marinade ingredients into a large ziplock bag and mix well.
