alcium instantly comes to mind whenever bone health is
mentioned; iron - whenever blood and anemia is the topic at
hand - sodium is typically associated with blood pressure issues
and of course potassium is inextricably linked to bananas...But
magnesium is far more of an enigma to many people. In fact,
magnesium may well be the most overlooked and unappreciated
essential mineral there is. Ironically enough though, magnesium
is also of vital importance to maintaining human health.
As the fourth most abundant mineral in the body, magnesium
is found in bones, teeth, and red blood cells, and is an essential
element required for proper functioning of the nervous, muscular
and cardiovascular systems. In fact, magnesium is responsible
for over 300 enzymatic reactions and is found in all of the body’s
tissues, but primarily concentrated in the bones, muscles,
and brain. It is required for the production of cellular energy (ATP),
to help stabilize membranes, to ensure muscle relaxation, as well
as for calcium, phosphorus, potassium and vitamin C metabolism.
So important is this essential mineral in fact, that there are over
3,500 medical references to conditions related to its deficiency.
Unfortunately however, in most of the developed world, magnesium
deficiency is probably the most common nutritional deficiency.
Magnesium Deficiency
To fully appreciate the scope of this essential mineral,
one need only take a look at some of the primary indications
for which it is used therapeutically: muscle cramping or twitches,
sleep difficulties, irritability, anxiety, depression, attention
deficit, palpitations, constipation, anal spasms, headaches and
migraines, chronic pain and chronic fatigue conditions, asthma,
diabetes, metabolic syndrome, brittle bone disease, osteoporosis,
high blood pressure, hormonal difficulties, menstrual cramps,
irritable bowel syndrome (IBS) and reflux, among various other
conditions. Clearly, a whole laundry list of symptoms ranging from
the mild to the far more serious, which are associated with a
magnesium deficiency.
To Supplement Or Not To Supplement. . .
That Is The Question
Figuring out whether or not you may be in need of supplemental
magnesium is not always an easy feat. The fact of the matter
is that magnesium levels can be affected by a multitude of
factors such as excessive intake of alcohol, salt, coffee, sweating,
exposure to prolonged or intense stress, chronic diarrhea, heavy
menstruation, use of diuretics, antibiotics and other drugs, as
well as certain intestinal parasites. Add to this the fact that the
magnesium we do consume is often of low quantity, isn’t highly
bioavailable and poorly absorbed from traditional food sources
and run of the mill multivitamin/mineral formulations, and it’s
no surprise that so many are deficient in an essential mineral
of such importance. In fact, despite how easily it can be found
in various foods in the diet, studies have shown that between
68-75% of North American adults are magnesium deficient.
As such, supplementation would clearly be of great benefit to a
great many of us.
The Question Then Becomes: Which
Magnesium
In their natural form, minerals are unusable by our bodies,
and because minerals are inorganic elements, they must first
be converted to an organic or biological compound, a process
known as chelation, in order to be absorbable by the body.
This is naturally done as a normal physiological part of the
digestive process: when an inorganic mineral presents itself,
a chemical process gets under way, chemically bonding
the inorganic molecule to an organic one. This is chelation and
the end product is called a chelate. From here, the mineral

Y
ou’d quite literally have to have been living under a rock not
to have heard about probiotics. Indeed probiotics have gone
increasingly mainstream in recent years and are now not only
found in abundance in your friendly neighborhood health
food store, but are also a permanent fixture in the majority of
pharmacies and most run of the mill grocery stores. In fact,
so popular have probiotics become, that they are increasingly
added to yogurts to bolster their beneficial bacterial count, as
well as to various dairy based beverages, fruit juices, and all
kinds of healthy snacks.
Taking it one step further down the mainstream route, many
hospitals are now keeping probiotics on hand should patients
develop tricky-to-treat bacterial GI infections.
So let’s say we’re agreed - most people have probably heard
of probiotics ... the question then becomes: do most people
understand what probiotics ARE and what incredible benefits
they offer?

Going Beyond The Name
If we are to start at the beginning and explore the word itself,
it would seem that the root of “probiotic” comes from the
contraction of the Greek words pro, meaning “promoting” and
biotic, meaning “life.” From there it is easy to understand that
the word basically denotes a substance that stimulates the
growth of microorganisms, especially those with beneficial
properties (such as those of the intestinal flora). In fact, in
general terms, probiotics are defined as live microbes which,
when taken in adequate amounts, confer a definite health
benefit to the person taking them. To put it even more plainly,
probiotics are what are typically referred to simply as “good
bacteria.” A little banal as far as a tagline goes, but if we’re trying
to be on point without going into much detail, that is the basic
gist of it.
I propose we peel the onion a tad further. . .
A Little History
Some Key Benefits
For most people, the word probiotic
conjures up images of thick gooey yogurt,
and while that isn’t entirely wrong, it is
however far too limiting and may lead us
to dismiss friendly bacteria as a mere
marketing gimmick or the latest
food fad.
When all is well, good bacteria should make up about 90 percent of
your gut microflora. That said, the bacterial landscape of the digestive
track is in a constant state of flux due to a variety of factors such as
diet, stress, medication, heredity, illness, and many, many more of
which we don’t fully appreciate. Though the growing body of scientific

suggested that the gut flora
could be modified and that
harmful microbes could be
replaced by beneficial ones,

bolstered.
Metchnikoff proposed that
intestinal toxicity was caused
by putrefactive bacteria that
generate toxins in the large
bowel. He described how the
proteolytic bacteria, clostridia,
that exist as part of the gut
flora produce toxic substances
such as phenols and ammonia
through the digestion of
proteins. He believed that intestinal toxicity could
directly contribute to the aging process, but that this
process could be suppressed by modifying the gut
flora to replace harmful microbes with beneficial ones.
Metchnikoff’s approach proposed the ingestion of
fermented milk to help establish harmless bacteria
in the gut, decrease the body’s pH, and thus provide
an environment entirely unfavorable to the growth of
proteolytic bacteria. Metchnikoff took his hypothesis one
step further and began testing out his fermented milk
theory on himself - he later reported that his health had
greatly benefited from the exercise.
Since Metchnikoff’s early musings, solid scientific research
on the validity of using probiotics for health maintenance has
been multiplying quickly. In fact, the bulk of current scientific
research on probiotics clearly shows that live active cultures
(friendly bacteria) can help prevent and treat a surprisingly
wide variety of ailments - many of which people would not
think to associate with the gut.
evidence on the subject is already quite robust, we are still merely
starting to learn about the importance of maintaining a healthy
cohort of bacteria in our digestive tract on a regular basis to bolster
our overall health and quality of life. Let’s explore certain key areas in
which probiotics can be of particular benefit.

Bad dietary habits such as consuming too much sugar nourishes
the harmful/pathogenic bacteria yeast and fungi that live in
the gut, which can actually harm you in many more ways than
merely by impacting insulin resistance. Probiotics fulfill many vital

More Benefits...
It cannot be repeated enough: most people simply do not realize
that 80 percent of the immune system is located smack dab in
the middle of the digestive tract (in the gut that is!). As such, it
becomes evident why a healthy gut is of primordial importance
to the maintenance of optimal health. In fact, beneficial, healthy,
friendly bacteria have a lifelong, powerful effect on the gut’s
immune system and in turn, on the systemic immune system as
a whole. Indeed, throughout life, friendly bacteria play a crucial
role in the development and functioning of the mucosal immune
system inside the digestive tract, as well as aid in the production
of pathogen-specific antibodies, whenever necessary.
While we have touched upon some of the basic, most obvious
and most scientifically researched benefits of probiotics, the
healthful advantages they offer go far, far beyond. Let’s quickly
explore some (though by no means all) of the other important
benefits of friendly bacteria.
Mood and Neurological Health
If we delve a little deeper and look at some less obvious
conditions that nevertheless do point to an imbalanced intestinal
flora, we find things such as ADHD, depression and autism
spectrum disorder. While most conventional practitioners may
not make the link, many well-versed natural health professionals
are well aware of the scientifically proven link that exists between
these conditions and poor intestinal health. In fact, it is often
said that the gut is quite literally the second brain because it
originates from the same type of tissue as the brain. As such,
both the gut and brain are said to work in tandem-like fashion,
each exerting a decided influence on the other, and each having
an inextricable and profound impact on the other. This intricate
relationship between the two helps explain the link between
neurological disorders and gastrointestinal dysfunction. For
example, gluten intolerance is frequently a feature of autism,
and many autistic children will show signs of improvement (to
varying degrees of course) when they are put on a strict glutenfree, sugar-free diet. Even more interestingly, scientific research
has shown that establishing a healthy intestinal flora within
the first 20 days or so of life plays a crucial role in appropriate
maturation of a baby’s immune system.
DIGESTING AND ABSORBING CERTAIN
CARBOHYDRATES. Without a healthy intestinal flora, the
body simply cannot absorb certain undigested starches, fibers,
and sugars. In the digestive tract, friendly bacteria convert these
carbohydrates into primary sources of important energy and
nutrients, so an all-around benefit to health in general.
PRODUCING VITAMINS, ABSORBING MINERALS
AND ELIMINATING TOXINS. Probiotics help the body
produce both vitamin K and B vitamins, and assist with
mineral absorption.
PREVENTING ALLERGIES. Friendly, healthy, beneficial
bacteria train the immune system to distinguish between
pathogens and non-harmful antigens, and to respond accordingly
to each. This critical function is what prevents the immune
system from overreacting to non-harmful antigens, which in turn,

A Few Basics When Selecting Your Probiotics

Extraordinary Health Magazine: You started
your NHL career with the Florida Panthers. Do you have any
fond memories of your time in Florida?
David Booth: I have a lot of great memories of Florida.
Growing up, our family always vacationed down there, so to
be drafted and to have the opportunity to play for the Panthers
from 2006 to 2011 was very special for me and my family.
My brother lives in Fort Lauderdale, and I have a lot of good
friends there who visit me every year to watch me play wherever
I may be. Florida has been really good to me, and it’s somewhere
I’ll always go back to for the rest of my life.
EHM: You’ve also played for the Vancouver Canucks
and the Toronto Maple Leafs. What’s next for you in your
NHL career?
DB: I’m a free agent right now. Training camp begins
on September 17th, so I have about a month to see what will
happen, what will transpire. Anything can change in the matter
of a minute. You never know where you’ll end up, but that’s
something you train hard for so that when you’re given this
opportunity, you’re ready to jump on it. I’m training hard
to make sure that whatever team it may be, I’m ready to
go. I’m truly looking forward to another season.
EHM: What are your off-season hobbies?
Do you and Ashley do anything special together?
DB: We’re very dedicated to making sure that we get
our workouts in and that we’re eating healthy no matter
where we’re at. With that said, we’re able to travel a lot.
We always go to Park City, Utah. We traveled to British
Columbia to visit friends—there’s a very active lifestyle there
that we love. This summer, we were in Australia for two weeks.
Wherever we go, we try different things; we take in the culture.
There are a lot of opportunities out there that we’d like
to take advantage of while we’re young and healthy,
and before starting a family of our own. Garden of Life
plays into that a lot, since we’re able to travel with our
products. It makes it easy for us to maintain our active
and healthy lifestyle.
EHM: So, how’s the married life? (Married Ashley
Booth on June 14, 2014)
DB: I love being married. She takes good care of me,
and I wish I had this kind of support a lot earlier in my life.
But, she steals all of my Garden of Life supplements.
I have to hide them from her sometimes!
EHM: What are some of your favorite Garden of Life
supplements, and how have they helped you?
DB: There are so many products that I can’t go without.
Starting with the probiotics, the new line of Dr. Formulated

health issues I’ve been dealing with. I’m not a scientist
or a nutritionist, but I do know that some of the processed food

wild animals. They raised that grizzly bear since it was born.
Not only that, but they’ve had a polar bear for 20 years!
Hanging with the grizzly is definitely a moment in my life that
I’ll never forget.
EHM: Any words of wisdom for our magazine readers?
DB: It’s just a matter of discipline and sticking with what
you want out of life. The way you feel, the amount of energy
you have and your mood have so much to do with what you
put into your body. For us — my wife and I — we’re rarely in a
bad mood. We’re always happy and full of energy! It starts with
discipline.
Grammy’s Magic Millet
SERVES 4

Millet is wonderful for building blood, so this recipe
was perfect for me after giving birth. My mom made
this recipe for me several times when she was helping
out right after Murphy was born. Thanks, Mom!
INGREDIENTS (USE ORGANIC)
• 1 cup millet
• 2½ cups water
• 1 Tablespoon Garden of Life coconut oil
• 6 Medjool dates, pits removed
• ¼ teaspoon sea salt
DIRECTIONS
Heat up a pot and place millet inside, stirring frequently for
2 minutes to toast the millet. Add water and bring to a boil. Reduce
heat to medium and add coconut oil, dates and salt. Cook on low,
and simmer for 20 minutes. Eat warm. Try adding ½ teaspoon
of cinnamon and/or fresh berries on top, if desired. Lasts 5 days
refrigerated. It’s gluten free, dairy free, vegan and soy free.
Crockpot Chuck
INGREDIENTS (USE ORGANIC)
• 1½ pounds of boneless beef chuck roast
• 2 Tablespoons Garden of Life coconut oil
sea salt
• 1½ cups beef or chicken broth
• ½ cup red wine or an additional
½ cup of broth
• 1 28-ounce can of diced tomatoes
• 1½ cups chopped carrots
• 1 cup chopped onions
• 6 garlic cloves
• 3 bay leaves
• 1 Tablespoon Italian seasoning
DIRECTION
Turn crockpot on high and add in all ingredients, except the
chuck roast. Generously salt the chuck roast on both sides.
Place coconut oil in a skillet on stovetop and heat on high. Place chuck roast
in skillet and let sear for 2 minutes on each side. Next, place the chuck roast
in the crockpot, cover with lid and let cook for 6 hours. Lasts 5 days refrigerated.
It’s gluten free, dairy free and soy free.
The crockpot became my new best friend after Murphy was born
because I could make some delicious recipes that didn’t take a lot of
time. Basically, you just throw everything into the crockpot and let it
do its magic for several hours, which leaves you more time for baby!

Getting in protein and fat is crucial for me while
breastfeeding. I absolutely love Garden of Life’s Organic

flavor. Paired with some delicious fruits, hydrating
coconut water and healthy fats from coconut butter, this
is exactly how I like to start my morning. Top it off with
some B-12 spray, which is amazing for energy, and I’m

INGREDIENTS (USE ORGANIC)
• 2 cups coconut water
• 1 scoop Garden of Life Raw Protein (Vanilla)
• 1 cup raspberries
• 1 cup frozen banana chunks

I love homemade granola and this simple and
delicious recipe can last several weeks refrigerated.
This recipe is loaded with healthy protein and fats,
and when I needed a late night or 3 a.m. snack
after nursing Murphy, this was prefect.
INGREDIENTS (USE ORGANIC)
• 1½ cups chopped or slivered almonds
• 1 cup quick oats (gluten free), optional
• 1 cup chopped walnuts
• 1 cup coconut flakes
• ½ cup pumpkin seeds
• ¼ cup Garden of Life coconut oil (melted)
• ½ cup maple syrup
• 1 teaspoon almond extract
• 1 teaspoon cinnamon
• ¼ teaspoon sea salt
DIRECTION
Preheat oven to 275 degrees. In a large bowl, combine all ingredients and mix well so
everything is well coated with coconut oil. On a large cookie sheet, spread granola mixture
into a single layer and bake for 30 minutes. Remove from oven, let granola cool, and then
crumble into bite-size pieces. Store in refrigerator for up to 3 weeks. It’s gluten free, dairy
free, soy free and vegan.

With the new school year already in full swing, the hot, lazy days
of summer slowly fading into memory, and work commitments
ramping up, most of us are far too busy to be thinking about
hitting the gym or taking on a healthy new “get in shape”
program. Indeed, the majority of adults have a tendency to power
through our fall commitments. . .only to suddenly awaken after
the frenzy of the holidays to ill f itting clothes and a sluggish
metabolism. This is typically what triggers our renewed
commitment to getting into shape, f inding that healthy balance
and getting back to our ideal weight. But it needn’t be this way.
L
et’s face it, we North Americans have a natural tendency
to be really active during the warm spring and summer
months, but to gradually go into hibernation mode
as fall rolls around and the temperatures start to dip. That
isn’t to say we don’t love our winter skiing and snowboarding
sessions, it’s just that we’re far less committed
to our healthy lifestyles in the cooler months. Après-ski anyone?

Proving How Organic Farming Can Heal Our Planet
Garden of Life® associate Jason Hunolt and his wife Branwen are living a dream in their dream
homestead—a lovely historical home with a few acres that includes a 3,600 square-foot organic farm
and more. Here’s a look at their progress—straight talk from the Hunolts about what it takes to build
and live out that dream.
I
t’s been an interesting first few months carving out the framework
of our organic farm that was birthed in our hearts. My wife and
I have ideas that are shared by many and pursued by few, but
we decided to embark on this adventure anyway.
Here’s a bit of a backdrop: I’m an herbalist, and a Territory
Manager at Garden of Life, whose uncompromising commitment
for organic and non-GMO food and products ignited a deeper
passion in me and Branwen to take this even more personally
and live it out daily: we wanted to set up a permaculture/
organic/non-GMO homestead consisting primarily of fruits,
veggies and medicinal herbs. We are avid organic farmers,
and completely embrace the non-GMO movement for many
reasons too numerous to list here. Additionally, we wanted
a new—or renewed—understanding of human beings’ relationship
with their mother, our Earth.
We started with a couple tasks—outside of learning how
to care for and maintain multiple landscaped acres. Our initial
foray into our organic farm venture was to test the theories
and suppositions we have apprehended over the years
and to provide an empirical structure to judge them against—
a rather daunting task.
Daunting or not, however, Branwen and I are up to the task
because it’s that important to us. We choose to heal, to honor
the Earth, to leave our mark—not only for ourselves and
our daughter, Estelle, but for generations who follow.
How Our Organic Gardening Dream
Became a Reality
After many years of having a handful of small raised beds
growing vegetables, we knew that we wanted an organic
garden—a big one. In short, the variety of vegetables that
we wanted to grow could never fit in three 8’x 5’ plots. Don’t
get us wrong. You certainly can grow a nice amount of food
in that space, but one winter squash plant can take over two
of those, if it wanted to, and we simply wanted more veggies
than just winter squash.
We say that we wanted to have a big organic garden,
but we never had the opportunity to have one until recently,
when we had a chance to purchase a beautiful historical
home with a few acres. As you can imagine, we leapt
at the chance to buy the house and the land—and to start
our mega organic garden.
Our dream was becoming reality and our imaginations
began running wild to turn the most pressing projects
into reality as soon as we moved in. That said, our top
priorities (if not essentials) were to create 3,600 square-foot
garden and make an 11’ x 12’ chicken coop.
Believe us when we say that it’s much easier said than done.

Coop Adventure
Take our garden, for instance. The garden needed a rabbit fence
ASAP. Why? Apparently, the boxwoods in the landscaping were
home to a little rabbit farm, so we couldn’t plant anything until
the rabbit fence was in place. So, what we thought we needed to
tackle first became more like second and third. The rabbit fence
had to happen first.
Next up, we realized that you don’t just go create a garden
aimlessly, so we also have been putting swales in the garden
because we want to incorporate permaculture principles
to create as much of a self-sustaining and self-maintaining
system as possible.
So, what is permaculture? Glad you asked!
Permaculture is the concept of creating permanent
agricultural systems. This traditionally includes features
that allow natural resources such as water to be captured
and stored to maximum efficiency.
Now for polycultures. . . Polycultures are plants that not only
have beneficial or harmonious relationships with each other,
but also enrich the soil and support the soil and landscape
structure. They could be plants that add nitrogen, plants that
have deep roots or mats of roots that create soil stability
for slopes, or even plants whose roots loosen compacted soil,
allowing water to soak in the landscape and allowing you
to work the soil easily.
In short, everything is multipurpose. You see? There is much
more to gardening than meets the eye.
Even water has its ups and downs—literally. We have preserved
water in some cases, and lost it monumentally in others, but our
goal is to find a way to not need to irrigate our fields in any way.
So far, we are succeeding, but we have a lot to learn and only
time will tell if this will work over the long haul.
While we were scrambling to get our garden going and
chicken coop built, we were at the mercy of an exceptionally
rainy and steamy summer. You know Mother Nature—she is
going to do what she does, so you just have to work around her!
Speaking of working around. . . we also had to work around
our job responsibilities and commitments as well as family
obligations. We knew that going into this, but sometimes
we sure wished there were more hours in the day!
And then, every so often, there are setbacks because, well, life
just happens and being human gets the best of us. For example,
we lost some precious time with a window of good weather
due to Jason being very ill for five days from—of all things—
a bad case of food poisoning. Can you believe it? When it rains,
it pours. During that time, Branwen wished that she had
some carpentry skills and gigantic muscles like Jason does,
but, sadly, she didn’t get her wish, so we had to wait until
Jason recuperated.
Now for the latest on the chicken coop adventure.
The breed of chickens we purchased ended up growing feathers
incredibly fast. We have never had chickens fly so early before,
and we’ve never seen anything like it! That really upped
the ante for us to get the chicken coop livable though,
since they were quickly outgrowing their box with the heat lamp.
Happily, the almost-fully-feathered chickens are now in their
new home—the chicken coop. They love perching on the natural
branches and stumps that we fixed inside. We still have to finish
some trim and add the roofing shingles though. The next big project
is to finish the enclosed run for them to enjoy the outdoors.
That too, seems to be an ongoing endeavor, but Estelle absolutely
adores those baby chicks and cradles them when we check
in on them. It’s so cute! She learns something new every day
about organic farming.
In the meantime, our garden has been growing like gangbusters!
By early August, we had already harvested all of our French
salad radishes, and the Daikon radishes were quickly maturing.
Beets were being pulled and lacto-fermented, and the carrots
were ready too. Peas had already finished reaching their peak
by the time the dog days of summer rolled around. The garlic
was completed as well. Pepper cress had already gone to seed,
while the cucumbers were starting to really produce. The corn was
growing fast, and the sweet potatoes were thriving, while the winter
squash and watermelon plants were doing what they do best—
taking over as much land as possible while sending out flowers
galore. Our culinary herbs were happy in the August weather, and
the climbing pole beans were flowering. The tomato plants and
peppers were fruiting, and we were looking forward to harvesting
some of them soon.
We even had green and brown cotton plants that were getting
happy, and we are excited to teach Estelle about fiber and
textiles, helping her understand where her clothes, not just
her food, come from. We want to teach her to be a good steward
of the earth, and understand that she is a part of the earth,
and that we have a non-negotiable, interdependent relationship
with plants, starting from the ground up.
While we got a late start with our garden, it was nice to know
that there was still ample time left in the growing season.
August is when most gardens really start booming—the soil
is warm, the sun is hot and the electric rain of thunderstorms
acts like superfood on the plants. The truth is that many people
can start their own garden even in August, since there is still
time to plant some short-season crops, such as beets, carrots
and bush beans, for a fall harvest. Likewise, many items are
planted in the fall for next year’s harvest—onions and garlic,
for example.
All in all, we say that gardening is downright amazing,
so go ahead and get sweaty and dirty while gardening.
Not only does it help purge last winter’s funk out of your lymph,
but gardening also exposes your body to the wealth of beneficial
microbes which are all around you. Truth be told, our bodies are
meant to adapt to and incorporate the microbial world found
immediately around us by us eating food grown in the local soil.
What better way to do that than to garden?

Emily Deschanel
Makes No Bones About Her Health

When Emily Deschanel casually tosses around words such as phalanges, manubrium and scapula,
it’s because she’s learned a thing or two while playing Dr. Temperance Brennan on FOX Television’s
longest-running comedy-drama, Bones. Entering its 11th season in October, the show is based on the career
of forensic anthropologist and author Kathy Reichs, and premiered on September 13, 2005. After filming
more than 200 episodes in a decade, her character, nicknamed “Bones,” has scrutinized enough skeletons
to name nearly all of the 206 bones in the body. When we spoke with her recently, she was happily
multitasking at home while feeding her two-month-old son in between interviews.

“I’ve looked at a lot of gross, dead bodies on the show over the
years,” Deschanel laughed. “I’m definitely more aware of the fact
that there are a lot of things which are not good for your bones.
For instance, if your body doesn’t get proper nutrition, it will
actually leach what it needs from the bones and cause problems.
Once, when I was filming a scene, my character was supposed
to offer someone a soda to drink. I said we couldn’t do that because
soda is not good for your bones!”
In real life, Deschanel’s ancestral bones trace back to French,
Swiss, Dutch, English and Irish descent. Born in Los Angeles,
the 39-year-old actress and producer is the daughter of Academy
Award nominated cinematographer Caleb Deschanel and actress
Mary Jo Deschanel, and bears a striking resemblance to her
younger sister Zooey, the star of the comedy sitcom New Girl. After
graduating from Boston University’s Professional Actors Training
Program with a Bachelor of Fine Arts in Theater, she made her
feature film debut in 1994 in It Could Happen to You. Following
notable appearances in Cold Mountain, The Alamo and Glory Road,
she was named one of “six actresses to watch” in 2004 by Interview
Magazine. She won the lead role on Bones in 2005 and has been
a hit with millions of fans ever since.
On the show, Deschanel has a great relationship with co-star
David Boreanaz, who plays her husband, FBI Agent Seeley Booth.
The duo solve murders and unexplained deaths from clues gleaned
from the victims’ skeletal remains, but it’s the dark comedy and
affection between the two stars that set the show apart from similar
crime shows. Off the set, life is much less dramatic for Deschanel,
who is married to actor and writer David Hornsby and lives
in Los Angeles with their two young sons. While raising a family
and working can be daunting, she is committed to several
causes and is an outspoken supporter of how vegetarian and vegan
diets can help the environment. With the season premiere of Bones
coming up in October, we talked to her about why she thinks
the show has been successful for so long and how life has
changed at home with a new baby.

Magazine: Congratulations
on the recent birth of your
second child! How does life
change with a two-month-old?
Emily Deschanel: It changes
a lot. The balancing act
you do with one child and working is multiplied by about
50 times! I’m breastfeeding, so I’m trying to schedule that
every two hours during the work day. There are a lot of new
challenges, but I don’t mind. My son is so cute!
EHM: Is there such a thing as achieving balance with your
career, motherhood, marriage and your personal interests?
Do you have any tips for others striving to do this?
ED: I’ve realized that you simply can’t do everything, at least
not every day. For instance, maybe you can’t exercise one day
because you need more time with your kids. When I’m not able
to be with my sons, I like to leave some reminders for them.
I write notes to my oldest son, Henry, and put them in his
lunchbox, or I’ll leave a note for him to find near his bed when
he wakes up so he’ll know that I’m thinking about him.
EHM: You’ve been a vegan for most of your life. Are you raising
your kids vegan?
ED: They are not 100 percent vegan, and neither is my husband.
The kids are about 99 percent vegan, and that’s because I let
them eat eggs occasionally with their dad. I think it’s a great way
to feed your babies. Henry loves veggies, and he’s totally into it.
Someone gave him candy at a party not long ago and he asked,
“Why did they give this to me? I don’t eat candy!” So, I’m really
proud of him because nutrition is important to me, and I love it
when I have these victories. I know it can sometimes be tricky
to feed kids, but I openly offer healthy vegan options and
cultured vegetables to them all the time.
EHM: Describe your diet for us. What are your favorite foods?
ED: I have a very alkaline diet. I love to drink green juices and
eat lots of salads. I also like to make a habit of eating as many
different colors of vegetables as I can. As for treats, of course,
there’s fruit and you can even get vegan chocolate. For Easter,
I buy little chocolate vegan bunnies and give them to everyone.
ED: I don’t sit a lot. I try to stand or walk more because
it’s so much better than sitting around. During the day,
I’ll do little bursts of exercise such as 30 squats, and then
I’ll try to keep moving all day long. I’ve learned it’s not good
to avoid exercising entirely just because you don’t have time
for a full workout at the gym that day. I focus on getting
in a few minutes of exercise here and there when I can!

EHM: What other things do you do to stay healthy?
EHM: Can you tell us about your involvement with the Farm Sanctuary
and why it’s important to you?
ED: I’ve been a fan of the organization for years and joined their board
about a year ago. Everything started when I decided to become vegan
22 years ago after visiting their sanctuary in New York. It was life-changing
to see animals growing up in a healthy environment. I like to take Henry
so that he can experience these animals and see that they have their
own personalities—even the chickens! It’s very eye-opening to go there
because they also do a great job of educating about the dangers
of factory farms and where our food comes from.
EHM: Do you believe leading a vegetarian or vegan lifestyle can help
save the planet?
ED: Absolutely. Some people don’t seem to realize that factory farms
do more harm to the environment than all of our transportation vehicles
combined. There are a lot of discussions about the importance of fuelefficient vehicles, but people can do more for the earth by becoming vegan.
EHM: Bones is one of the longest-running shows on television.
Why do you think the show has resonated with audiences for so long?
ED: I believe it’s because it’s not just a procedural show. The tone changes
all the time and people are really interested in the characters. I can think
of several other shows that are more focused on solving the crime instead
of the people who are solving it. Bones is fun to watch because people fall
in love, break up and experience difficulties, but it also has a lightness to it.
Sometimes, it seems like an action thriller, while other times it feels more
like a comedy with a few dead bodies thrown in!
EHM: Do you watch other crime shows at home?
ED: Not really. I’m a huge Downton Abbey fan!

INGREDIENTS:
2 8 oz. grassfed beef steaks
VEGGIES:
1 Portabella mushroom
1 zucchini
1 red onion
1 red bell pepper
MARINADE:
¼ cup coconut aminos (or 3 Tablespoons wheat free tamari)
3 minced garlic cloves
2 teaspoons grated ginger root
1 Tablespoon sesame seed oil
1 teaspoon maple syrup
½ teaspoon chinese five spice
¼ teaspoon sea salt
dash of cayenne pepper
Serves 2
DIRECTIONS:
Place all marinade ingredients into a large ziplock bag and mix well.
Add steaks and refrigerate for 2 hours, or let marinate for 20 minutes
at room temperature before grilling. Grill steaks on high heat,
7-8 minutes per side (adjust timing as needed).

Salad
Serves 4-6
INGREDIENTS FOR SALAD:
2 cups water
1 cup tricolor quinoa

and massage them down with your hands until the leaves soften
in texture. Next, chop apple and cooked sweet potato and add those

and toss. Keep refrigerated for up to 3 days.

3 Tablespoons olive oil

DIRECTIONS:
Mix all marinade ingredients together and pour into a ziplock bag.
Wash and slice veggies for grilling. Add veggies into bag with marinade
and let sit for several hours before grilling. Grill veggies on medium high
heat for 4-to-5 minutes on each side.
Pumpkin Pie Bread
DRY INGREDIENTS: (use organic)
1 cup gluten-free flour

INSTRUCTIONS :
Tout d’abord, préparer le quinoa. Faire bouillir 2 tasses d’eau avec de
l’huile de noix de coco et une pincée de sel de mer. Ajouter le quinoa,
puis réduire le feu et laisser cuire pendant environ 20 minutes; puis
laisser refroidir. Dans un grand bol, mettre le chou frisé (kale) et
les épinards. Verser un peu d’huile d’olive et une pincée de sel sur le
chou frisé et les épinards et massez-les avec vos mains jusqu’à ce que
les feuilles ramollissent. Coupez la pomme et patate douce cuite et les
ajouter au mélange. Ajouter les graines de chia, les canneberges, les
pacanes et le quinoa refroidi. Fouetter les ingrédients de la vinaigrette,
verser sur la salade et mélanger. Servir immédiatement ou conserver
au réfrigérateur jusqu’à 3 jours.
INSTRUCTIONS :
Préchauffer le four à 350 degrés
et graisser un moule 9x9 ou
un moule à pain. Mélanger les
ingrédients secs et mettre de côté.
Battre les œufs, puis mélanger
le reste des ingrédients humides.
Lentement, ajouter les ingrédients
secs aux ingrédients humides et
mélanger jusqu’à ce que tout soit
bien mélangé. Verser le mélange
dans le moule et cuire pendant
65-75 minutes ou jusqu’à ce que
le dessus du pain soit doré.

6 tasses de bouillon de légumes
1 cuillère à soupe d’huile de noix de coco
Garden of Life
1 cuillère à soupe d’huile d’olive
6 gousses d’ail hachées finement
½ tasse d’oignon jaune haché
2 tasses d’haricots verts hachés
2 tasses de carottes hachées
2 tasses de pommes de terre pelées et
hachées (rouge ou du Yukon)
2 tasses de champignons hachés
2 tasses de chou haché (sans tiges)
28 onces de tomates en dés
15 onces de pois chiches, rincés
¼ de cuillère à café de sel de mer
¼ de cuillère à café de poivre noir
1 cuillère à café de basilic séché
½ cuillère à café d’aneth séché
½ cuillère à café de cumin
2 feuilles de laurier
Garniture: persil frais haché et quartiers

INSTRUCTIONS :
Chauffer l’huile de noix de coco et l’huile
d’olive dans une grande casserole à feu
moyen-doux. Une fois l’huile chaude,
ajouter l’oignon, l’ail et une pincée de sel et
faire revenir pendant environ 5 minutes.
Ajouter le ¼ de cuillère à café de sel et de
poivre, carottes, haricots verts, pommes
de terre et le ¼ tasse d’eau et poursuivre
la cuisson pendant 4 à 5 minutes, en
remuant de temps en temps. Ajouter le
bouillon de légumes et porter à ébullition.
Une fois à ébullition, ajouter les tomates,
le chou frisé, les champignons, les pois
chiches, les herbes et les feuilles de laurier.
Réduire le feu à doux, couvrir et laisser
cuire jusqu’à ce que les légumes soient
tendres, environ 25 à 30 minutes.
Retirer du feu et ajouter le persil et
un filet de citron. Servir immédiatement
ou conserver au réfrigérateur jusqu’à 5
jours ou au congélateur jusqu’à 2 mois.

Ajouter les germes d’haricot

mijoter pendant 1 minute.
Enfin, ajoutez la viande, les
châtaignes et les noix de cajou
et laisser mijoter pendant
2 minutes supplémentaires.

à la vapeur

1 tasse de lait de coco léger
½ tasse d’oignon jaune ou blanc haché

doux et ajouter le riz cuit à la
vapeur et le brocoli. Laisser

Préchauffer une grande casserole à feu moyen-vif.
Ajouter l’huile, puis ajouter les gousses d’ail hachées.
Cuire pendant environ 2 minutes,
puis ajouter la pâte de tomate et la sauce et cuire encore 5 minutes.
Ajouter les tomates concassées, le sucre, le sel, le poivre et les épices.
Laisser mijoter pendant au moins une heure, ou jusqu’à 8 heures.
Si vous utilisez les courgettes en guise de pâtes, faites des spirales à l’aide de l’outil pour se faire ou peler de fines lanières
(afin qu’elles ressemblent à des fettuccinis) en utilisant un couteau éplucheur. Si vous utilisez des pâtes sans gluten, les
faire cuire dans de l’eau chaude comme vous le feriez avec des pâtes régulières. Servir la sauce sur votre choix de pâtes et
garnir de fromage rawmesan.
Pour le « fromage » : Mettre tous les ingrédients dans votre malaxeur en utilisant la lame en forme de “s” et bien
mélanger. Servir avec des pâtes, soupes ou en salade. Conserver dans un récipient au réfrigérateur pendant jusqu’à un
mois.
INSTRUCTIONS :
Préchauffer le four à 350º F.
Mélanger ensemble les œufs,
la vanille, le miel, le sirop et
l’huile de noix de coco. Dans un
autre bol, mélanger ensemble la
farine, le sel, la cannelle et les

Qu’est-ce que le magnésium?
Le calcium nous vient en tête instantanément quand l’on parle des
os; nous pensons automatiquement au fer lorsqu’il est question
du sang ou de l’anémie; nous associons naturellement le sodium
à la pression artérielle, et bien sûr le potassium aux bananes...
Mais le magnésium par contre, est une énigme pour plusieurs
d’entre nous. En fait, le magnésium est fort probablement le minéral
essentiel le plus méconnu et négligé qu’il est. Paradoxalement,
le magnésium est également d’importance vitale pour le maintien
de la santé.
QUELQUES FAITS : le magnésium est le quatrième minéral
le plus abondant dans le corps. Il se trouve dans les os, les dents
les globules rouges, et est un élément essentiel requis pour assurer
le fonctionnement des systèmes nerveux, musculaires et cardiovasculaires. En effet, le magnésium est responsable de plus
de 300 réactions enzymatiques et est présent dans tous les
tissus de l’organisme, mais principalement concentré dans
les os, les muscles et le cerveau. Il est nécessaire pour la
production d’énergie cellulaire (ATP), pour aider à stabiliser les
membranes, pour assurer la relaxation des muscles, ainsi que
pour le métabolisme du calcium, du phosphore, du potassium
et de la vitamine C. Ce minéral est si important qu’il y a plus de
3 500 références médicales à des conditions liées à sa carence.
Néanmoins, dans la plupart des pays développés, la carence
en magnésium est probablement la carence nutritionnelle la plus
courante - chose fort inquiétante.
La carence en magnésium
Pour pleinement apprécier la portée de ce minéral essentiel, il suffit
de jeter un coup d’oeil à quelques-unes des principales indications
pour lesquelles il est utilisé thérapeutiquement : crampes ou tics
musculaires, troubles du sommeil, irritabilité, anxiété, dépression,
déficit de l’attention, palpitations, constipation, crampes anales,
maux de tête et migraines, douleur et fatigue chronique, asthme,
diabète, syndrome métabolique, maladie des os de verre,
ostéoporose, hypertension artérielle, troubles hormonaux, crampes
menstruelles, syndrome du côlon irritable (IBS) et reflux gastrique.
Clairement, il existe toute une gamme de symptômes allant de
léger à beaucoup plus sévère, qui sont associés à une carence
en magnésium.
Avez-vous besoin d’un supplément de magnésium?
Évaluer si vous avez besoin d’un supplément de magnésium n’est
pas toujours aussi évident qu’on le penserait. En fait, nos niveaux
de magnésium peuvent être affectés par toute une panoplie
de facteurs tels que la consommation excessive d’alcool, de sel,
de café, la transpiration, un stress prolongé ou intense, une diarrhée
chronique, une menstruation lourde, l’utilisation de diurétiques,
des antibiotiques et autres médicaments, ainsi que certains
parasites intestinaux. Ajoutez à ceci le fait que le magnésium
que nous consommons de source alimentaire ou fourni par le biais
de formules “multi » est souvent de piètre qualité, peu biodisponible
et mal absorbé, et il n’est pas surprenant de constater que tant de
gens soient déficients en un minéral essentiel d’une telle importance.
En fait, malgré le fait que le magnésium est présent dans divers aliments
de notre alimentation, les études ont démontré qu’entre 68 à 75% des
adultes nord-américains en sont déficients. La supplémentation s’avère
donc nécessaire pour plusieurs d’entre nous.
Mais comment choisir son supplément
de magnésium?
Dans leur forme naturelle, les minéraux ne sont pas utilisables
par le corps, et puisque les minéraux sont des éléments
inorganiques, ils doivent d’abord être transformés en un composé
organique (ou biologique), un processus connu sous le nom
chélation, afin d’être absorbé par le corps.
Le corps effectue ce travail naturellement; c’est en effet une partie
physiologique normale du processus digestif : quand un minéral
inorganique est ingéré, un processus chimique se met en branle,
liant chimiquement la molécule inorganique à une molécule
