BAR LIBERTY A selection of fermented beverages This is an alcohol bar. Whilst we have a bit of a thing for wine, that’s certainly not all we serve. Floral attractive aromas, near dry rather than off-dry. A perfectly balanced trinity of salt, acidity, and delicate fruit, delivered with such lightness of texture. 2014 Premier Emois (Demi-Sec) 80 Apples. On the palate it is a little weightier than Transparente and a touch sweeter. The softest of the bunch - lovely, affectionate, secretive. 2014 Trois Pépins (Sec) 90 Apples, pears and quinces. Very bracing to drink, what a rush of salt and acidity, plus the astringency of quince skin. It’s a very, very grown-up drink, and the most gastronomic. 2009 Poiré (Sec) Pears. 8 native varieties of pear. Something quite special. Dry tasting with incredibly delicate bubbles. Champagne-esque. Thus, red wines always include the skins to extract colour, whereas most white wines simply press the grapes and discard the skins. These wines have such succulence and purity, with delicious and integrated acidity. 1999 Wendouree Shiraz/Mataro Clare Valley, Sth Aust 190 Some of this country's longest lived red wines originate from an incredible vineyard in the Clare Valley, with gnarled vines that top 100 years of age.
